Youtiao (Chinese Fried Dough Sticks)

Long, golden and hollow-centred, youtiao are Chinese fried dough sticks enjoyed for their crisp shell and airy, elastic crumb. They are typically made from a lightly leavened wheat dough, pressed into paired strips so they puff and open as they fry. Fresh from the oil, they are savoury rather than sweet, with a delicate chew that makes them especially good alongside hot soy milk, congee or a simple dipping sauce. The key to their character is immediacy: steady frying, a relaxed dough and serving while still hot give youtiao their recognisable lift, crunch and lightness.

Why this recipe works

  • Crisp, airy texture: A soft, rested dough expands quickly in hot oil, giving the sticks their light interior and brittle golden crust.
  • Recognisable youtiao shape: Stacking the strips in pairs and pressing down the centre helps them cling together and puff into the classic split, elongated form.
  • Simple ingredient list: Plain flour, chemical leaveners, salt, water and oil create the essential structure without enriched dough or long fermentation.

Timing notes

  • Let the dough relax: The two resting periods make the dough easier to roll and stretch while giving the leaveners time to work gently.
  • Serve straight after frying: Youtiao are at their best while hot, when the crust is crisp and the centre is still light and steamy.
  • Most of the time is inactive: The recipe takes over an hour overall, but the hands-on work is mainly mixing, shaping and frying in batches.

Common mistakes

  • Letting the oil drift: Keep the oil close to 190°C (375°F); cooler oil can make the dough greasy, while hotter oil browns the outside before the centre has puffed.
  • Overworking the dough: Knead only until smooth and elastic. Too much kneading can tighten the dough and make the finished sticks denser.
  • Frying too many at once: Add only a few pieces per batch so the oil temperature recovers quickly and each stick has space to expand.

Ingredient notes

  • Use plain flour: Plain flour gives the right balance of structure and tenderness; stronger flour can make the dough chewier and less delicate.
  • Check the leaveners: Fresh baking powder and bicarbonate of soda help the dough puff properly during frying.
  • Sparkling water option: Sparkling water can make the dough slightly lighter, but it should not replace proper resting or steady frying temperature.

Serving ideas

  • Serve with congee: Tear hot youtiao into pieces and serve alongside rice porridge for a classic savoury breakfast pairing.
  • Pair with soy milk: Warm or chilled soy milk is a traditional match, balancing the fried dough with a mild, creamy drink.
  • Add a savoury dip: Serve with soy-based dipping sauces or chilli oil if you want a stronger savoury contrast.

  1. In a mixing bowl, whisk together the plain flour, caster sugar, baking powder, bicarbonate of soda and fine sea salt. Add the water and mix to a shaggy dough, then knead for 3 to 4 minutes until smooth and elastic.
  2. Cover the dough and rest for 30 minutes at room temperature. Knead briefly for 30 seconds to smooth it out, then cover again and rest for a further 30 minutes so the dough relaxes and leavens lightly.
  3. Pour the vegetable oil into a large pot to a depth of about 6 to 7 cm and heat to 190°C (375°F). While the oil heats, roll the dough into a rectangle about 5 mm thick, then cut into strips about 2.5 cm wide and 10 to 12 cm long.
  4. Pair the strips, stacking two together, then press a line down the centre lengthways to help them cling. Stretch each pair gently to lengthen slightly, then lower into the hot oil and fry, turning with tongs, for 2 to 3 minutes until puffed and deep golden.
  5. Lift out and let excess oil drip back into the pot, then serve straight away while hot, crisp and airy. Keep the oil temperature close to 190°C (375°F) between batches for the best puff.

Recipe notes

Tips

  • For the lightest texture, keep the dough soft and only knead until smooth; over-kneading can make the sticks less airy.
  • Use a thermometer and fry at a steady 190°C (375°F); cooler oil makes greasy youtiao, while hotter oil browns before the centre puffs.
  • Take care with hot oil, and keep children away from the hob while frying.

Substitutions

  • Replace Water with sparkling water for a slightly lighter, airier dough.

Storage

  • Refrigerate up to 1 days
  • Youtiao are best eaten straight away. If needed, cool completely and store in an airtight container for up to 1 day, then reheat in a 200°C (390°F) oven for 5 to 7 minutes until hot and crisp.
