Chinese Cabbage Stir-Fry Bowl (Napa Cabbage and Jasmine Rice)
Why this recipe works
- Fast cooking: The rice cooks while the cabbage and aromatics are prepared, keeping the whole bowl comfortably under 30 minutes.
- Aromatic base: Ginger, garlic and spring onion build fragrance before the cabbage goes in, giving the simple sauce more depth.
- Tender-crisp cabbage: Quick stir-frying softens the napa cabbage without making it watery, so it stays light against the jasmine rice.

Ingredient notes
- Choose fresh napa cabbage: Look for pale, crisp leaves with firm ribs; tired or limp cabbage will release more water in the wok.
- Shaoxing wine adds aroma: Shaoxing cooking wine brings a savoury, lightly nutty depth that works especially well with soy sauce and ginger.
- Separate the spring onions: Use the white parts with the aromatics for flavour, then add the green tops at the end to keep them fresh and bright.
Texture tips
- Keep the wok hot: A hot wok helps moisture evaporate quickly, so the cabbage becomes glossy and tender rather than stewed.
- Cook to your preferred bite: For cabbage with more crunch, stop as soon as the thicker ribs are just tender and the leaves have wilted.
Make-ahead tips
- Store rice and cabbage apart: Keeping the rice and stir-fry in separate airtight containers helps preserve the texture when reheating.
- Reheat the cabbage briefly: Warm the stir-fry quickly in a hot pan rather than cooking it for too long, which can make the cabbage soft and watery.
Ingredient swaps
- Swap the Shaoxing wine: Dry sherry gives a similar aromatic note if Shaoxing cooking wine is unavailable.
- Adjust the sweetness: Light brown sugar can replace caster sugar for a slightly deeper, more caramel-like sweetness.

Instructions
- Rinse the rice until the water runs mostly clear, then tip into a saucepan with the water. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, slice the napa cabbage into bite-sized pieces and thinly slice the spring onions, keeping the white and green parts separate. Peel and finely grate the ginger, and finely chop the garlic.
- In a small bowl, whisk together the Shaoxing wine, light soy sauce, caster sugar, cornflour and water until smooth.
- Heat the vegetable oil in a wok over medium-high heat. Add the ginger, garlic and the white parts of the spring onion, and stir-fry for 30 to 60 seconds until fragrant.
- Add the napa cabbage and stir-fry for 3 to 4 minutes until it starts to soften but still has a little bite. Pour in the sauce and toss for 1 to 2 minutes until glossy and lightly thickened. Take off the heat and stir through the toasted sesame oil and the green parts of the spring onion.
- Divide the rice between two bowls and spoon the cabbage stir-fry over the top. Serve straight away.
Recipe notes
Tips
- Keep the wok hot and the cabbage moving so it stays tender with a little crunch rather than turning watery.
- If you like heat, add chilli crisp at the table so everyone can adjust the spice level to taste.
Substitutions
- Replace Shaoxing Cooking Wine with dry sherry for a similar aroma.
- Replace caster sugar with light brown sugar for a slightly deeper sweetness.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate the rice and stir-fry in separate airtight containers. Reheat the rice with a splash of water in the microwave until piping hot, and reheat the cabbage briefly in a hot frying pan so it does not overcook.
