Bulgogi (Marinated Beef)
Why this recipe works
- Layered savoury-sweet flavour: Soy sauce, garlic, toasted sesame oil and pear create a marinade that is deeply savoury, gently sweet and aromatic.
- Fast cooking: Thinly sliced beef cooks in minutes, making the recipe practical once the short marinade has done its work.
- Pear in the marinade: Grated pear adds natural sweetness and helps the marinade cling to the beef for a glossy finish.

Timing notes
- Short marinade: Thirty minutes gives the thin beef enough time to absorb the soy, garlic, sesame and pear without slowing the recipe down.
- Serve straight away: Bulgogi is best eaten hot from the pan, while the beef is glossy and the spring onions still have a little bite.
Ingredient notes
- Choose the right pear: A ripe but firm pear grates easily and brings gentle sweetness without making the marinade watery.
- Slice the beef thinly: Cutting across the grain keeps the beef tender and helps it cook quickly in the hot pan.
- Use toasted sesame oil: Toasted sesame oil gives bulgogi its distinctive nutty aroma; plain sesame oil will taste much milder.
Common mistakes
- Avoid overcrowding: If the pan is too full, the beef will steam rather than brown. Cook in batches if needed.
- Use high heat: A very hot pan helps the marinade reduce quickly and coat the beef instead of pooling in the pan.
- Do not overcook the beef: Thin slices cook fast, so remove the pan from the heat as soon as the beef is browned, glossy and cooked through.
Make-ahead tips
- Prepare components ahead: The onion, spring onion and marinade ingredients can be prepared in advance so the final cooking is quick.
- Reheat gently but thoroughly: Warm leftovers in a hot frying pan with a splash of water until piping hot, taking care not to dry out the beef.
- Freezer-friendly: Cooked bulgogi can be frozen, then defrosted overnight in the fridge before reheating.

Instructions
- Grate the pear into a mixing bowl, then finely grate in the garlic. Stir in the light soy sauce, light brown sugar, toasted sesame oil and black pepper until the sugar dissolves.
- Slice the beef as thinly as you can across the grain. Add it to the marinade and mix well so every piece is coated, then leave to marinate for 30 minutes at room temperature.
- Meanwhile, thinly slice the yellow onion and cut the spring onions into 4 to 5 cm lengths. Keep them separate so the spring onions can go in at the end.
- Heat a large frying pan over high heat until very hot. Add the onion and cook for 2 to 3 minutes, stirring, until it starts to soften and pick up a little colour.
- Add the marinated beef, spreading it out in the pan, and cook for 3 to 5 minutes, tossing with tongs, until browned and glossy and the sauce clings to the meat. Add the spring onions for the last 1 minute so they stay bright and crisp-tender.
- Take off the heat and sprinkle over the roasted sesame seeds. Serve straight away while hot.

Serving suggestions
This recipe pairs well with:
Tips
- For easier slicing, chill the beef in the fridge for 15 to 20 minutes first, then slice thinly across the grain.
- Cook in batches if your pan is small; overcrowding will steam the beef instead of browning it.
- If serving vulnerable groups, make sure the beef is cooked through and piping hot.
Substitutions
- Replace pear with apple for a similar fruity sweetness in the marinade.
- Replace light brown sugar with honey for a rounder sweetness.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat in a hot frying pan with a splash of water until piping hot; avoid overcooking. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
