Vietnamese Herb Chicken Bowl with Jasmine Rice

Fragrant jasmine rice, grilled chicken and crisp vegetables make this bowl a fresh, satisfying way to bring Vietnamese-style flavours into an everyday lunch or dinner. The defining element is the nuoc cham-style dressing: salty fish sauce, lime, rice vinegar, garlic, sugar and chilli, giving the bowl its bright, savoury-sweet lift. Boneless chicken thighs suit the grill well, staying juicy while picking up light char, while cucumber, carrot, mint and coriander keep everything cool, aromatic and textured. Serve the components layered in bowls and spoon over the dressing just before eating so the herbs stay lively and the rice absorbs just enough tangy sauce.

Why this recipe works

  • Bright, balanced dressing: Lime, rice vinegar, sugar and fish sauce create the sweet-sour-salty balance that keeps the bowl lively rather than heavy.
  • Fresh contrast: Warm jasmine rice and charred chicken are balanced by cool cucumber, grated carrot and torn soft herbs.
  • Easy to prep in parts: The rice, chicken, vegetables and dressing can be stored separately, then assembled just before serving for the best texture.

Adjust the heat

  • For less heat: Remove the chilli seeds or use only part of the sliced chilli in the dressing.
  • For more heat: Add extra fresh chilli to the dressing or serve sliced chilli at the table.
  • Keep the dressing balanced: If adding more chilli, taste the dressing and adjust with extra lime or sugar so the heat does not overpower the fish sauce and herbs.

Ingredient notes

  • Chicken thighs stay juicy: Boneless, skinless thighs are well suited to grilling because they stay tender while taking on char.
  • Use fresh herbs: Fresh mint and coriander are important here; dried herbs will not give the same clean, aromatic finish.
  • Taste before dressing: Fish sauce varies in saltiness, so spoon the dressing over gradually and adjust to taste.

Make-ahead tips

  • Store components separately: Keep the rice, chicken, vegetables, herbs and dressing in separate airtight containers so the vegetables stay crisp.
  • Reheat only what needs warming: Warm the rice and chicken until piping hot, then add the cold vegetables, herbs and dressing just before eating.
  • Prep ahead: The vegetables can be sliced and grated in advance, but tear the herbs just before serving to keep them bright.

Common mistakes

  • Skipping the rice rinse: Rinsing and draining the jasmine rice helps remove excess starch, giving a lighter texture in the bowl.
  • Dry chicken: Avoid grilling the chicken longer than needed; rest it briefly before slicing so the juices settle.
  • Adding herbs too early: Add mint and coriander at the end so they stay fragrant rather than wilted.

  1. Rinse the jasmine rice until the water runs mostly clear, then cook it in a large pot of gently boiling water for 10 to 12 minutes until tender. Drain well in a colander and cover to keep warm.
  2. Meanwhile, finely grate or crush the garlic and put it in a bowl with the caster sugar, fish sauce and rice vinegar. Squeeze in the lime juice, add 3 tbsp water, then whisk until the sugar dissolves.
  3. Thinly slice the red chilli and stir it into the dressing. Pour about one third of the dressing over the chicken thighs and leave to marinate while you prep the vegetables.
  4. Halve the cucumber lengthways and slice into thin half-moons. Peel the carrot and grate it, then set both aside.
  5. Heat the grill to medium-high and lightly brush the grates with a little of the toasted sesame oil. Grill the chicken for 5 to 7 minutes per side, until nicely charred and cooked through.
  6. Rest the chicken for 3 minutes, then slice it. Stir the remaining toasted sesame oil into the remaining dressing.
  7. Divide the rice between two bowls and top with cucumber, carrot and sliced chicken. Tear the fresh mint and fresh coriander over the top, then spoon over the dressing to taste.

Recipe notes

Tips

  • For the best texture, rinse the rice well and drain it thoroughly so it stays fluffy rather than sticky.
  • If serving anyone who is pregnant, elderly, or immunocompromised, cook the chicken until piping hot throughout with no pink remaining.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly sharper dressing.
  • Replace caster sugar with honey for a rounder sweetness in the dressing.
  • Replace chicken thighs with chicken breast cutlets, grilling for a shorter time so they stay juicy.

Storage

  • Refrigerate up to 2 days
  • Store rice, chicken, vegetables and dressing separately in airtight containers. Reheat rice and chicken in the microwave until piping hot, then add the cold vegetables, herbs and dressing just before serving.
