Causa Limeña (Peruvian Layered Potato Dish)

Served chilled and sliced into tidy layers, causa limeña is one of Peru’s most recognisable savoury potato dishes. Smooth mashed potato is seasoned with ají amarillo and lime, giving it a gentle chilli warmth, bright acidity and a distinctive yellow colour. Here it encloses a creamy chicken filling with red onion, celery, coriander and avocado, so each slice has soft potato, richness, freshness and a little crunch. It works well as a make-ahead appetiser or light meal, especially when clean presentation and cool, refreshing flavours are wanted.

Why this recipe works

  • Bright, balanced flavour: Lime cuts through the creamy chicken filling and seasoned potato, keeping the dish fresh rather than heavy.
  • Smooth, sliceable layers: Steam-drying and mashing the potatoes well helps create a firm, even layer that holds its shape once chilled.
  • Ideal served cold: Chilling is part of the recipe, so the dish can be assembled ahead and sliced neatly when ready to serve.

Timing notes

  • Chill before slicing: Allow at least 30 minutes in the fridge so the potato layers firm up and the filling sets cleanly.
  • Serve cold: Causa is best served straight from the fridge or only briefly at room temperature, especially because of the mayonnaise and avocado.
  • Best on the day: The texture holds for a couple of days, but the avocado looks freshest and brightest on the day it is assembled.

Ingredient notes

  • Choose waxy, golden potatoes: Yukon Gold potatoes mash smoothly but still hold enough body for layering, which is important for a clean slice.
  • Ají amarillo paste: Ají amarillo gives causa its recognisable yellow colour, fruity chilli flavour and mild heat; adjust to taste if your paste is particularly strong.
  • Use firm-ripe avocado: The avocado should be ripe enough to taste creamy but firm enough to slice without collapsing into the filling.

Make-ahead tips

  • Assemble in advance: Build the layers, cover well and refrigerate until needed; this improves firmness and makes serving easier.
  • Keep covered: Pressing cling film close to the surface helps limit air exposure and slows avocado browning.
  • Plan around the avocado: For the cleanest colour and freshest flavour, serve the assembled causa the same day where possible.

Authenticity notes

  • Peruvian layered causa: Causa limeña is a Lima-style version of causa, typically served chilled and shaped in layers rather than as a hot potato dish.
  • Flexible fillings: Chicken with mayonnaise is a common filling, while other versions may use tuna, seafood or vegetables depending on the cook and occasion.

  1. Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the salt. Bring to the boil, then simmer for 15 to 20 minutes until very tender.
  2. Drain well, then return the potatoes to the hot pot for 1 minute to steam-dry. Mash until smooth, then stir in the ají amarillo paste, the juice of 1 lime, and the remaining 1 tsp salt. Taste and adjust with more lime juice if you like it sharper, then cool until just warm.
  3. Finely dice the red onion and celery, and chop the coriander. Shred the cooked chicken breast into small pieces. In a bowl, mix the chicken with the mayonnaise, onion, celery, coriander, black pepper, and a squeeze of lime juice to brighten it.
  4. Halve, stone and slice the avocados. Squeeze a little lime juice over the slices to help prevent browning. Keep them ready for layering.
  5. Line a small dish or bowl with a little cling film if you want easy unmoulding, or build directly on a serving plate using a ring mould if you have one. Press half the potato mixture into an even layer, add the avocado in a single layer, then spread over the chicken filling. Top with the remaining potato mixture and smooth the surface.
  6. Cover and chill for at least 30 minutes so the layers firm up. Unmould if needed, then slice with a sharp knife, wiping the blade between cuts for neat edges. Serve chilled.

Recipe notes

Tips

  • For the cleanest slices, chill the causa until fully cold, then cut with a knife dipped in hot water and wiped dry between slices.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised mayonnaise.

Substitutions

  • Replace Fresh coriander with Fresh flat-leaf parsley for a milder, less citrusy herb note.
  • Replace Red onion with Shallot for a softer, sweeter onion flavour.

Storage

  • Refrigerate up to 2 days
  • Keep covered in the fridge and serve chilled. Avocado can darken over time; pressing cling film directly onto the surface helps reduce browning.
