Holiday Moqueca (Brazilian Fish Stew with Coconut Milk)
Why this recipe works
- Layered but simple flavour: Softened onion and red pepper build sweetness before garlic, cumin, tomatoes and coconut milk create a savoury, aromatic base.
- Silky coconut broth: Keeping the sauce at a gentle simmer helps the coconut milk stay smooth while the fish cooks delicately.
- Bright finish: Lime juice and fresh coriander cut through the richness of the coconut milk and keep the stew lively.

Ingredient notes
- Choose firm white fish: Use a firm, skinless white fish fillet so the pieces hold their shape as they simmer in the sauce.
- Palm oil adds character: Palm oil gives the stew colour and depth; olive oil is a practical substitute if palm oil is unavailable.
- Add lime at the end: Stirring in the lime juice just before serving keeps the flavour fresh rather than muted.
Texture tips
- Keep the fish succulent: Cut the fish into large chunks and simmer very gently so it turns opaque without drying out.
- Protect the coconut sauce: Once the coconut milk is added, avoid a hard boil; low heat keeps the broth smooth and glossy.
Make-ahead tips
- Make the base ahead: The tomato, pepper and coconut base can be prepared in advance, then reheated gently before adding the fish.
- Store rice separately: Keep the rice and stew in separate containers so the grains do not absorb too much sauce in the fridge.
- Reheat with care: Warm leftovers over a low heat until piping hot, stirring gently so the fish stays in pieces.

Ingredients
Instructions
- Rinse the rice until the water runs mostly clear. Cook it in a saucepan with a pinch of the fine sea salt and enough water to cover by about 2 cm, then simmer gently for 12 minutes. Cover, take off the heat, and leave to steam for 10 minutes.
- Meanwhile, heat the palm oil in a large pot over a medium heat. Finely slice the yellow onion and red pepper, then cook with a pinch of the fine sea salt for 8 to 10 minutes until softened and sweet. Crush the garlic, stir it in with the ground cumin, and cook for 1 minute until fragrant.
- Add the canned chopped tomatoes and simmer for 5 minutes to meld the flavours. Pour in the coconut milk and bring to a gentle simmer, then season with a little more fine sea salt. Keep the heat low so the sauce stays silky.
- Cut the white fish fillet into large chunks and nestle them into the sauce in a single layer. Simmer very gently for 6 to 10 minutes, turning once, until the fish is opaque and flakes easily. Avoid boiling, which can make the fish break up.
- Finely chop the fresh coriander. Squeeze in the lime juice, stir through most of the coriander, and taste for fine sea salt. Serve the moqueca over the rice, scattering the remaining coriander on top.
Recipe notes
Tips
- Keep the stew at a gentle simmer once the coconut milk is added; a hard boil can split the sauce and break up the fish.
- Cut the fish into larger pieces so it stays succulent and holds together in the broth.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the fish is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace palm oil with olive oil for a similar richness and an easier-to-find option.
- Replace ground cumin with curry powder for a warmer, spicier profile while keeping the stew style intact.
- Replace long-grain white rice with jasmine rice for a more fragrant base.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat the stew gently in a saucepan over a low heat until piping hot, stirring carefully so the fish stays in pieces; add a splash of water if it has thickened. Rice is best stored separately and reheated with a tablespoon of water, covered, until steaming hot.
