Qatayef (Sweet Cheese-Filled Pancake Dumplings)
Why this recipe works
- Crisp shell, soft centre: Frying the sealed pancakes gives the outside a golden crust while the ricotta filling stays tender and creamy.
- Fragrant syrup: Lemon and orange blossom water lift the sugar syrup, balancing the richness of the cheese filling.
- One-sided pancakes: Cooking the pancakes on one side leaves the bubbled surface soft enough to fold and pinch into a secure seal.
- Good for sharing: The small half-moon shape makes qatayef easy to serve warm as a dessert platter or sweet snack.

Timing notes
- Let the batter bubble: The batter should look slightly thicker and aerated before cooking; this helps create the characteristic porous pancake surface.
- Serve soon after dipping: Qatayef are at their best shortly after frying and syruping, while the outside is still crisp and the filling is warm.
- Work in stages: Make the syrup first, then prepare the batter and filling while it cools to a warm, fluid consistency.
Ingredient notes
- Use orange blossom water carefully: Orange blossom water varies in strength, so the syrup should taste fragrant rather than perfumed.
- Check the ricotta texture: If the ricotta looks wet, press out excess liquid briefly so the filling stays creamy rather than loose.
- Keep the milk lukewarm: Milk that is warm rather than hot helps activate the yeast without damaging it.
Common mistakes
- Letting the pancakes dry out: Keep cooked pancakes covered as you work; dry edges are harder to pinch closed and may open during frying.
- Frying too hot: Use medium heat and adjust as needed so the qatayef turn deep golden without burning before the filling warms through.
- Over-soaking in syrup: Dip the hot qatayef briefly, then let the excess drip away so the syrup coats the crust without softening it too much.
Make-ahead tips
- Make the syrup ahead: The syrup can be prepared in advance and gently warmed before dipping so it coats smoothly.
- Store undipped if needed: For the best texture, keep fried qatayef undipped until just before serving.
- Re-crisp before serving: Reheat undipped fried qatayef in a 180°C (355°F) oven until crisp, then dip in warm syrup just before serving.

Instructions
- Make the syrup: put the caster sugar in a saucepan with 200 ml water. Peel 2 wide strips of lemon zest, then squeeze 1 tbsp lemon juice; add both to the pan. Bring to the boil, then simmer for 8 to 10 minutes until slightly thickened.
- Take the syrup off the heat and stir in the orange blossom water. Leave warm while you make the qatayef; it will thicken a little as it cools. Discard the lemon zest before dipping.
- Warm the milk until just lukewarm, then whisk in the active dry yeast and 1 tsp of the caster sugar from the syrup ingredients. Leave for 5 to 10 minutes until foamy. This helps ensure the batter rises properly.
- In a mixing bowl, whisk together the plain flour, baking powder and fine sea salt. Pour in the yeasted milk and whisk to a smooth, pourable batter. Cover and leave in a warm place until bubbly and slightly thicker, about 30 minutes.
- Meanwhile, make the filling by stirring the ricotta with 1 tbsp of the caster sugar from the syrup ingredients and 1 tsp lemon juice. Keep it covered so it does not dry out. If it seems wet, press it briefly with a spoon to remove excess liquid.
- Heat a frying pan over medium heat and lightly brush with a little sunflower oil. Ladle in small rounds of batter, about 8 to 10 cm across, and cook for 1 to 2 minutes until the surface is covered in bubbles and the underside is pale golden. Do not flip; transfer to a tray and cover with a clean tea towel to keep them soft.
- Fill and seal: place a spoonful of ricotta filling on the cooked side of each pancake, then fold into a half-moon. Pinch the edges firmly to seal, leaving the centre slightly puffed. Work while the pancakes are still warm so they seal easily.
- Fry the qatayef: heat the remaining sunflower oil in the pan over medium heat. Cook the dumplings in batches for 2 to 3 minutes per side until deep golden and crisp, adjusting the heat so they do not burn. Drain briefly on a rack or plate.
- Dip each hot qatayef into the warm syrup for 5 to 10 seconds, then lift out and let the excess drip off. Serve immediately while crisp outside and tender within. If the syrup has cooled too much, warm it gently so it stays fluid.
Recipe notes
Tips
- Keep the cooked pancakes covered with a clean tea towel as you work; if they dry out, they will not seal properly.
- Aim for a warm, not hot, syrup when dipping so it coats quickly without making the qatayef soggy.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised milk and ensure the filling is heated through during frying.
Substitutions
- Replace Whole milk with Lactose-free milk for a lactose-friendly batter.
- Replace Ricotta with Mascarpone for a richer, creamier filling.
- Replace Orange Blossom Water with Rose-water for a different floral syrup.
Storage
- Refrigerate up to 2 days
- Qatayef are best eaten straight away. If needed, store undipped fried qatayef in the fridge and reheat in a 180°C (355°F) oven for 6 to 8 minutes until crisp, then dip in warmed syrup just before serving.
