Caribbean Veggie Bowl
Why this recipe works
- Layered flavour: Coconut rice gives a mellow base, black beans add savoury depth, and roasted plantain brings natural sweetness.
- Good contrast: Fluffy rice, tender beans, soft caramelised plantain and juicy pineapple salsa keep each bite varied.
- Easy to prep ahead: The cooked components keep well separately, so the bowl can be assembled quickly without the salsa softening the rice.

Adjust the heat
- Keep it mild: Remove the chilli seeds before chopping, or use only a small amount in the salsa.
- Add more heat: Keep the chilli seeds in, or add extra chopped chilli to the pineapple salsa just before serving.
- Balance the chilli: Use extra lime juice or a little more pineapple if the salsa tastes too sharp or hot.
Ingredient notes
- Choose ripe plantain: A plantain with black speckles will roast sweeter and softer than a green one.
- Use fresh pineapple if possible: Fresh pineapple gives the salsa a brighter, juicier texture than canned fruit.
- Rinse the rice well: Rinsing removes excess surface starch and helps the coconut rice cook up lighter.
Make-ahead tips
- Store separately: Keep the rice, beans, plantain and salsa in separate airtight containers so the textures stay distinct.
- Reheat gently: Warm the rice and beans with a splash of water until piping hot, and reheat the plantain in a 200°C (390°F) oven.
- Add salsa at serving: The pineapple salsa is freshest when spooned over just before eating.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Rinse the rice in a colander under cold water until the water runs mostly clear.
- Put the rice in a saucepan with the coconut milk, water and 0.5 tsp of the fine sea salt. Bring to the boil, then cover and cook on the lowest heat for 12 minutes; take off the heat and leave, covered, for 10 minutes to finish steaming.
- Meanwhile, peel the plantain and cut it into 1.5 cm slices. Toss on a baking tray with the olive oil and a pinch of the remaining salt, then roast for 15 to 18 minutes, turning once, until golden and caramelised at the edges.
- Drain and rinse the black beans, then tip them into the saucepan you used for the rice (no need to wash it). Warm over a low heat for 3 to 4 minutes with a splash of water and a pinch of salt, just until hot.
- Make the pineapple salsa: finely dice the pineapple and red onion, then finely chop the red chilli pepper and fresh coriander. Squeeze in the lime juice, add a pinch of salt, and toss well; let it sit for 5 minutes to meld.
- Fluff the coconut rice with a fork and divide between two bowls. Top with the warm black beans and roasted plantain, then spoon over the pineapple salsa and finish with any extra lime juice to taste.
Recipe notes
Tips
- For the best texture, keep the rice on the lowest heat and do not lift the lid while it cooks; the final covered rest makes it fluffy.
- Choose a ripe plantain with plenty of black speckles for a sweeter, more caramelised roast.
- If serving to children or anyone sensitive to heat, remove the seeds from the red chilli pepper before chopping.
Substitutions
- Replace olive oil with avocado oil for a more neutral flavour when roasting the plantain.
- Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb note.
- Replace red chili pepper with jalapeno pepper for a gentler, greener heat.
Storage
- Refrigerate up to 3 days
- Store the rice, beans, plantain and salsa in separate airtight containers for the best texture. Reheat the rice and beans in the microwave with a splash of water until piping hot; warm the plantain in a 200°C (390°F) oven for 6 to 8 minutes, then add the salsa cold.
