Spaghetti alle Cozze (Spaghetti with Mussels)
Why this recipe works
- Briny depth: The mussels steam directly in wine, garlic and olive oil, creating a naturally savoury sauce without needing a long simmer.
- Fast cooking: Mussels cook in minutes, making this a seafood pasta that can be finished comfortably in under half an hour.
- Fresh balance: Dry white wine and parsley lift the richness of the olive oil and keep the sauce light rather than heavy.

Ingredient notes
- Choose live, fresh mussels: Use mussels with intact shells that are closed, or that close when tapped. Discard cracked shells before cooking and any mussels that stay closed after steaming.
- Use a dry white wine: A crisp, dry white wine keeps the sauce clean and savoury. Avoid sweet wines, which can make the finished pasta taste unbalanced.
- Prep before the pan gets hot: Clean the mussels, slice the garlic and chop the parsley before cooking, as the sauce comes together quickly once the wine is added.
Timing notes
- Serve immediately: This pasta is at its best as soon as it is tossed, while the spaghetti is glossy and the mussels are still tender.
- Cook the pasta and sauce together: Start the mussels while the spaghetti cooks so both components are ready at the same time.
Texture tips
- Use pasta water for gloss: Add reserved pasta water gradually while tossing to help the olive oil and mussel juices form a light, glossy sauce.
- Do not oversteam the mussels: Once the shells open, move on to tossing the pasta. Extended cooking can make the mussels firm and less delicate.
Adjust the heat
- For less heat: Use fewer chilli flakes, or replace them with extra black pepper for warmth without a chilli finish.
- For more heat: Add a little more chilli at the garlic stage so it infuses the oil evenly before the wine goes in.

Instructions
- Bring a large pot of water to the boil and season with 1 tsp of the fine sea salt. Add the spaghetti and cook until al dente, according to the packet timings. Before draining, scoop out about 150 ml of the pasta water, then drain.
- While the pasta cooks, sort the mussels, discarding any that are cracked or remain open when tapped. Rinse well under cold running water. Set aside.
- Heat the olive oil in a large frying pan over a medium heat. Thinly slice the garlic, add it to the pan with the chilli flakes, and cook for 30 to 60 seconds until fragrant but not coloured.
- Pour in the dry white wine and bring to a lively simmer. Tip in the mussels, cover with a lid, and steam for 4 to 6 minutes, shaking the pan once or twice, until the shells open. Discard any mussels that do not open.
- Finely chop the fresh parsley and stir most of it into the mussel pan, reserving a pinch for serving. Add the drained spaghetti and toss well, adding a splash of reserved pasta water as needed to make a glossy, briny sauce that coats the pasta. Season with the remaining fine sea salt if needed and the black pepper, then serve straight away with the reserved parsley.
Recipe notes
Tips
- Keep the garlic on a gentle heat so it perfumes the oil without browning, which can make the sauce taste bitter.
- If the sauce looks thin, toss the pasta over a medium heat for 30 to 60 seconds so the starchy pasta water emulsifies with the olive oil.
- Food safety: discard any mussels with cracked shells, and any that do not open after cooking.
Substitutions
- Replace Dry White Wine with water for a non-alcoholic version; add a little extra reserved pasta water to keep the sauce lively.
- Replace Fresh parsley with fresh basil for a softer, sweeter herb note.
- Replace Chili flakes with a smaller amount of black pepper for warmth without chilli heat.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, cool quickly and refrigerate; reheat gently in a frying pan with a splash of water until piping hot, and discard any mussels that smell off.
