Skillet Turkey Chilli with Cornbread Topping

A skillet chilli with cornbread topping brings two familiar American comfort dishes together in one ovenproof pan: a thick, savoury bean chilli below and a soft golden cornmeal crust above. Turkey mince keeps the base lighter than a beef chilli while still taking well to cumin, chilli powder, garlic and tomatoes, with kidney beans adding body. As it bakes, the cornbread absorbs some of the chilli’s steam yet stays tender and sliceable on top. It is the kind of practical dinner that serves straight from the pan, with each spoonful giving both rich chilli and warm cornbread.

Why this recipe works

  • One-pan efficiency: The chilli simmers and bakes in the same ovenproof skillet, keeping the workflow compact and the washing-up manageable.
  • Chilli and cornbread contrast: A thick, spoonable filling supports the cornbread topping so it bakes into a golden crust with a soft underside.
  • Built-in depth: Onion, garlic, cumin and chilli powder season the turkey before tomatoes and beans simmer down into a rich base.

Adjust the heat

  • For gentler heat: Use mild chilli powder in place of hot chilli powder, then adjust at the end if you want a little more warmth.
  • For extra heat: Choose a hotter chilli powder or add a pinch of chilli flakes when the spices go into the pan.

Texture tips

  • Thicken before topping: The chilli should be thick enough for a spoon to leave a trail before the batter is added; if it looks loose, simmer uncovered a little longer.
  • Keep the cornbread tender: Stir the wet and dry ingredients just until combined. Overmixing can make the topping heavier.

Make-ahead tips

  • Prepare the chilli ahead: The turkey chilli can be cooked in advance, cooled and refrigerated, then reheated gently before adding the cornbread topping and baking.
  • Reheat until hot throughout: Reheat portions in a 180°C (355°F) oven until piping hot; the cornbread will soften slightly but still works well.
  • Freezer-friendly portions: Freeze cooked portions once completely cooled, then defrost overnight in the fridge before reheating.

Common mistakes

  • Adding batter to runny chilli: If the filling is too loose, the topping can sink and steam rather than bake properly. Reduce the chilli until it is thick and spoonable.
  • Not checking the topping: Bake until the cornbread is golden and a skewer inserted into the topping comes out clean.

Instructions

  1. Heat the oven to 200°C (390°F). Finely chop the onion and crush the garlic.
  2. Heat 1 tbsp vegetable oil in an ovenproof cast-iron frying pan over medium heat. Add the onion with 1 tsp fine sea salt and cook for 6 to 8 minutes until softened and lightly golden.
  3. Stir in the garlic, ground cumin and hot chilli powder and cook for 30 seconds until fragrant. Add the minced turkey and cook for 5 to 7 minutes, breaking it up, until no longer pink.
  4. Stir in the tomatoes, red kidney beans, water and black pepper. Bring to a gentle simmer, then cook for 20 to 25 minutes, stirring occasionally, until thick enough that a spoon leaves a trail.
  5. Meanwhile, whisk together the cornmeal, plain flour, baking powder and remaining 1 tsp fine sea salt in a mixing bowl. In a second bowl, whisk the egg with the buttermilk and 2 tbsp vegetable oil, then stir into the dry ingredients just until combined.
  6. Taste the chilli and adjust with a pinch more fine sea salt if needed. Spoon the cornbread batter over the chilli and gently spread it to the edges.
  7. Bake for 18 to 22 minutes until the cornbread is golden and a skewer inserted into the topping comes out clean. Rest for 5 minutes, then spoon through the cornbread crust to serve.

Recipe notes

Tips

  • If your skillet is not ovenproof, simmer the chilli in a large frying pan, then transfer to a baking dish before adding the cornbread topping.
  • For a thicker chilli, simmer uncovered for the final 5 minutes so excess liquid evaporates before topping with the batter.
  • If serving vulnerable groups, make sure the turkey is cooked through and piping hot before baking, and serve the finished dish hot.

Substitutions

  • Replace buttermilk with kefir for a similarly tangy cornbread topping.
  • Replace hot chili powder with mild chili powder for a gentler heat.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat portions in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; the cornbread will soften slightly. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
