Roast Chicken with Bread Sauce
Why this recipe works
- Classic texture contrast: Crisp roast chicken skin is balanced by the soft, creamy bread sauce served alongside.
- Gentle aromatic depth: Lemon, garlic and thyme season the chicken, while onion, clove, bay and nutmeg give the sauce its traditional warmth.
- Traditional sauce method: Infusing the milk before adding breadcrumbs gives the bread sauce flavour without making it heavy or harsh.

Authenticity notes
- Bread sauce technique: The sauce follows the classic British method of infusing milk with onion, cloves and bay before thickening it with fresh breadcrumbs.
- Classic pairing: Bread sauce is traditionally served warm with roast poultry, especially chicken or turkey, where its gentle spice and creaminess complement the meat.
Timing notes
- Rest before carving: Let the chicken rest before carving so the juices settle and the meat stays moist.
- Serve the sauce warm: Bread sauce thickens as it stands, so keep it over very low heat and loosen it with a little milk if needed before serving.
Texture tips
- For crisper skin: Drying the chicken skin well before adding the butter helps it roast to a more golden, crisp finish.
- For a smoother sauce: Whisk the breadcrumbs into the infused milk gradually and cook gently until the sauce becomes thick and creamy.
Make-ahead tips
- Prepare the sauce ahead: The bread sauce can be made in advance and reheated gently, with a little extra milk stirred in if it has thickened.
- Reheat separately: Store chicken and bread sauce separately, then reheat the chicken in a 180°C (355°F) oven and warm the sauce gently in a saucepan.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Pat the chicken dry, then mash the butter with the salt and lightly crushed peppercorns. Zest the lemon, then mix the zest into the butter and set the lemon aside.
- Gently loosen the skin over the breast and thighs, then rub most of the butter underneath and the rest over the skin. Halve the lemon and put it in the cavity with the garlic cloves and thyme. Roast in a roasting pan for 70 minutes, or until the juices run clear and the thickest part of the thigh reaches 75°C (170°F).
- While the chicken roasts, make the bread sauce: peel the onion and stud it with the cloves. Put the milk in a saucepan with the onion, bay leaves and a few thyme sprigs, then warm gently until steaming but not boiling. Take off the heat, cover, and leave to infuse for 15 minutes.
- Remove the onion, bay leaves and thyme from the milk. Whisk in the breadcrumbs and cook over a low heat for 5 to 8 minutes, stirring often, until thick and creamy. Stir in the nutmeg and a small knob of the remaining butter if you want it extra rich, then keep warm on the lowest heat.
- Lift the chicken onto a board and rest for 10 minutes before carving. Spoon any buttery juices from the roasting pan over the carved chicken. Serve with the warm bread sauce alongside.
Recipe notes
Tips
- For the best skin, keep the chicken uncovered in the fridge for a few hours before roasting to dry the surface, then butter and roast as directed.
- If the bread sauce thickens too much while standing, loosen it with a splash of whole milk and warm gently until steaming.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken reaches 75°C (170°F) at the thickest part of the thigh.
Substitutions
- Replace Fresh thyme with Bay leaves for a simpler, more traditional herb note, using 1 extra bay leaf in the milk infusion.
- Replace Whole milk with Milk and cream for a richer bread sauce, using the same total volume.
Storage
- Refrigerate up to 3 days
- Cool the chicken and bread sauce quickly, then refrigerate separately in sealed containers. Reheat chicken in a 180°C (355°F) oven until piping hot, and warm the bread sauce gently in a saucepan, stirring often and adding a splash of whole milk if needed.
