Farro Salad with Grilled Vegetables (Insalata di Farro con Verdure Grigliate)
Why this recipe works
- Chewy grains, tender vegetables: Farro keeps a pleasant bite, while the grilled vegetables add softness and light char.
- Bright dressing: Lemon juice and extra-virgin olive oil cut through the richness of the grains and vegetables without making the salad heavy.
- Good at room temperature: The salad does not rely on being served hot, making it useful for packed lunches, picnics and relaxed entertaining.

Texture tips
- Drain the farro well: Let the cooked farro shed excess moisture before dressing so the salad stays loose rather than waterlogged.
- Keep a little bite: Cook the farro until tender but still slightly firm, as it will soften a little as it absorbs the dressing.
Ingredient notes
- Choose ripe tomatoes: Sweet, ripe cherry tomatoes give the salad freshness and balance the smoky grilled vegetables.
- Use good olive oil: Because the dressing is simple, a fragrant extra-virgin olive oil makes a noticeable difference.
Make-ahead tips
- Prepare in advance: Cook the farro and grill the vegetables ahead, then bring the salad back towards room temperature before serving.
- Refresh before serving: After chilling, loosen the salad with a small drizzle of olive oil and a little citrus if it tastes flat.
Serving ideas
- Serve as part of a spread: Pair with simple grilled vegetables, bean dishes or crusty bread for an easy Italian-style lunch.
- Finish with herbs: Extra parsley or basil just before serving adds freshness and colour.

Instructions
- Bring a large pot of well-salted water to the boil. Add the farro and cook for 20 to 25 minutes until tender with a slight bite. Drain well and spread in a bowl to cool slightly.
- Meanwhile, slice the courgette and aubergine into long strips and cut the red pepper into wide pieces, discarding the seeds. Toss the vegetables with 2 tbsp of the extra virgin olive oil, 1 tsp of the fine sea salt, and the black pepper. Heat a grill until hot.
- Grill the vegetables in batches for 3 to 5 minutes per side until tender and nicely charred. Tip them onto a board and leave to cool for a few minutes. Cut into bite-sized pieces.
- Halve the cherry tomatoes. Finely chop the fresh parsley and grate the garlic to a paste. In a small bowl, whisk the remaining 3 tbsp extra virgin olive oil with the lemon juice, remaining 1 tsp fine sea salt, and the garlic.
- Add the grilled vegetables, cherry tomatoes, parsley, and dressing to the farro. Toss well and let it stand for 5 minutes so the flavours mingle. Serve at room temperature.
Recipe notes
Tips
- For the best texture, drain the farro thoroughly and let it cool until just warm before dressing so it absorbs flavour without going soggy.
- If your grill is small, keep the first batches warm on a plate while you finish the rest, then toss everything together at the end.
- If serving to anyone vulnerable, make sure the salad is not left at room temperature for more than 2 hours.
Substitutions
- Replace fresh parsley with fresh basil for a more aromatic, summery finish.
- Replace lemon with lime for a sharper, slightly more tropical citrus note.
- Replace extra virgin olive oil with olive oil for a milder dressing.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Serve at room temperature, or refresh with a small drizzle of extra virgin olive oil and a squeeze of lemon before serving.
