Tacos de Canasta (Basket Tacos with Beans and Potato)
Why this recipe works
- Basket-style texture: Stacking the brushed tacos and holding them covered creates the gentle steam that makes tacos de canasta soft, supple, and lightly glossy.
- Seasoned from the inside out: Onion, garlic, cumin, and guajillo-spiced oil flavour both the bean-potato filling and the tortillas without making the tacos heavy.
- Fresh contrast: Salsa verde, lime, and shredded lettuce cut through the richness of the beans, potatoes, and oil, keeping each taco bright.

Adjust the heat
- Keep it gentle: Use mild chilli powder in place of guajillo and choose a mild salsa verde if you want warmth and colour without noticeable heat.
- Add more bite: Choose a hotter salsa verde or add a little extra chilli to the oil, keeping the heat low so the spices bloom rather than burn.
- Balance at the table: Serve with plenty of lime and lettuce so each person can soften the heat and richness to taste.
Timing notes
- Do not rush the covered rest: The final covered steaming and resting time is what gives the tortillas their signature tender texture.
- Active work is front-loaded: Most of the hands-on time is spent cooking the potato filling, warming tortillas, and assembling; the final stage is largely hands-off.
- Best served warm: Serve soon after the tacos have softened, adding lettuce, salsa, and lime only at the end so the toppings stay fresh.
Authenticity notes
- Street-food style: Tacos de canasta are known for simple fillings, a spiced oil coating, and a stacked, steamed texture rather than a crisp shell.
- Soft, not crisp: The covered pan mimics the basket effect, trapping steam so the tortillas relax and absorb some of the seasoned oil.
- Classic finishing touches: Salsa verde, lime, and shredded lettuce provide the fresh, sharp contrast typically served with this style of taco.
Ingredient notes
- Guajillo character: Guajillo chilli powder brings a mild, fruity warmth and deep red colour; keep the oil gentle to avoid bitterness.
- Use pliable corn tortillas: Warming the tortillas before filling makes them easier to fold and helps prevent cracking as they are stacked.
- Steam-dry the potatoes: Letting the drained potatoes briefly steam-dry helps the filling stay cohesive rather than watery.

Instructions
- Put the potatoes in a large pot, cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 12 to 15 minutes until tender when pierced with a knife. Drain well and leave to steam-dry for 2 minutes.
- Meanwhile, finely chop the onion and crush the garlic. Warm the vegetable oil in a small saucepan over low heat, then stir in the guajillo chili powder and ground cumin and cook for 30 to 60 seconds until fragrant. Take off the heat and set aside; it should be warm and pourable, not smoking hot.
- Heat 1 tbsp of the spiced oil in a large frying pan over medium heat. Add the onion with a pinch of the remaining salt and cook for 6 to 8 minutes until soft and lightly golden, then add the garlic and cook for 30 seconds. Add the cooked potatoes and mash roughly with a wooden spoon, seasoning with another pinch of salt so the mixture tastes well seasoned.
- Add the refried beans to the pan and stir for 2 to 3 minutes until hot and cohesive. If it feels stiff, stir in 1 to 2 tbsp hot water from the kettle a splash at a time until spreadable. Keep the heat low so it does not catch.
- Warm the corn tortillas briefly so they are pliable, about 20 to 30 seconds per side in a dry frying pan. Spread a generous spoonful of the bean and potato filling over one half of each tortilla, fold, then brush the outside lightly with the remaining spiced oil. Stack the tacos as you go.
- Place the stacked tacos in a pot or deep pan, cover with a lid and keep over the lowest heat for 10 minutes so they steam and turn tender. Turn off the heat and leave covered for a further 5 minutes to finish softening. They should feel supple and slightly glossy from the oil.
- Serve the tacos warm with shredded iceberg lettuce and salsa verde. Cut the lime into wedges and squeeze over to taste. Eat straight away for the best texture.
Recipe notes
Tips
- Keep the spiced oil on a low heat and take it off as soon as it smells fragrant; overheated chilli powder can turn bitter.
- For the signature tender texture, do not skip the covered resting time; the steam is what softens the tortillas.
- If serving anyone vulnerable, make sure the refried beans are heated until piping hot before filling the tortillas.
Substitutions
- Replace Yukon Gold potato with red potato for a slightly firmer, less fluffy filling.
- Replace salsa verde with salsa for a different heat level and a more tomato-forward finish.
- Replace guajillo chili powder with mild chili powder for a similar colour and gentler warmth.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the tacos in a covered pan over low heat for 6 to 8 minutes, or in a 180°C (355°F) oven wrapped and covered until piping hot; add lettuce and salsa verde after reheating.
