Ribollita (Tuscan Bread and Bean Soup)
Why this recipe works
- Hearty and satisfying: Beans, vegetables and bread turn a simple soup base into a filling, spoonable meal.
- Built-in depth: Softened onion, carrot and celery create a savoury foundation before the tomatoes, thyme, beans and kale are simmered together.
- Improves as it stands: The bread continues to absorb the broth after cooking, giving the soup a thicker texture and more integrated flavour.

Authenticity notes
- Tuscan character: Ribollita is known for its rustic Tuscan style: beans, greens, vegetables, bread and olive oil rather than a smooth or brothy finish.
- Bread as thickener: The bread is not just served alongside the soup; it is stirred in so it breaks down and gives ribollita its distinctive dense texture.
Ingredient notes
- Use sturdy bread: A firm country-style bread works best because it softens gradually and thickens the soup without collapsing too quickly.
- Fresh or dried thyme: Fresh thyme gives a gentle herbal note, but dried thyme can be used as directed if fresh is unavailable.
- Choose hearty greens: Tuscan kale suits the long simmer because it keeps some structure while becoming tender.
Texture tips
- For a thicker soup: Let the soup stand covered after cooking so the bread can absorb more broth and settle into a spoonable consistency.
- Avoid a gluey finish: Use day-old bread and keep the simmer gentle once it is added, stirring often enough to prevent catching.
Make-ahead tips
- Good for meal prep: Ribollita keeps well in the fridge and will thicken as it rests, making it practical for lunches over several days.
- Reheat gently: Warm on the hob with a little water or stock to loosen, stirring often until piping hot throughout.
- Freezer-friendly: Freeze after cooling completely, then defrost and reheat gently, adjusting the consistency with extra liquid if needed.

Ingredients
Instructions
- Warm 2 tbsp of the olive oil in a large pot over a medium heat. Add the onion, carrot and celery with 1 tsp of the salt and cook for 10 minutes, stirring often, until softened and lightly golden.
- Stir in the garlic and thyme and cook for 1 minute until fragrant. Add the tomatoes and cook for 3 to 4 minutes to take the raw edge off.
- Pour in the stock and bring to a gentle simmer. Add the beans and simmer for 20 minutes so the flavours meld.
- Meanwhile, strip the kale leaves from any tough stems and tear into bite-sized pieces. Add the kale to the pot and simmer for 10 to 12 minutes until tender.
- Tear the bread into rough pieces and stir it into the soup. Simmer gently for 8 to 10 minutes, stirring, until the bread breaks down and the soup turns thick and spoonable.
- Cover and let the soup stand off the heat for 10 minutes to settle and thicken further. Fish out the thyme sprigs, then taste and adjust with the remaining salt if needed.
- Ladle into bowls and finish each portion with the remaining olive oil and the black pepper. Serve hot.
Recipe notes
Tips
- For the best texture, use bread that is at least a day old so it thickens the soup without turning gluey.
- Keep the simmer gentle once the bread goes in, and stir regularly so it does not catch on the bottom.
- If serving anyone vulnerable, make sure the soup is reheated until piping hot throughout.
Substitutions
- Replace Tuscan kale with kale for a similar hearty texture.
- Replace Fresh thyme with 0.5 tsp dried thyme, added with the garlic.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently on the hob with a splash of water or stock to loosen, stirring often, until piping hot; the soup will thicken as it stands.
