Struffoli (Neapolitan Honey Fritters)
Why this recipe works
- Crisp, light pieces: Small dough balls fry quickly, giving struffoli their recognisable crisp exterior without becoming heavy.
- Sweetness with lift: Lemon and orange zest cut through the honey coating, keeping the finished dessert fragrant rather than flat.
- Glossy honey coating: Warming the honey just until fluid helps it coat the fritters evenly and bind them into the classic piled shape.
- Built for sharing: The mound-style presentation makes this a natural centrepiece dessert for serving in small portions.

Authenticity notes
- Neapolitan style: Struffoli are closely associated with Naples: tiny fried dough balls coated in honey and served piled together rather than as individual pastries.
- Finishes vary: Household versions often differ in the citrus used and the final garnish; toasted nuts add a simple, crunchy finish here.
Timing notes
- Rest the dough: The short room-temperature rest makes the dough easier to roll into thin ropes and helps the pieces hold their shape.
- Serve while glossy: Struffoli are best assembled while the honey is still warm and tacky, so the pieces cling together neatly.
Texture tips
- Keep the oil steady: Hold the oil at 170°C (340°F) and fry in small batches so the dough crisps evenly without absorbing excess oil.
- Cut evenly: Keep the dough nuggets similar in size so they cook at the same rate and the centres are done before the outside overcolours.
Make-ahead tips
- Make ahead: Store the finished struffoli in an airtight container at cool room temperature for up to 2 days, or refrigerate for up to 3 days.
- Refresh before serving: Warm briefly in a 150°C (300°F) oven, then let the honey settle before serving.

Ingredients
Instructions
- Put the flour, caster sugar, fine sea salt and dried orange zest in a mixing bowl. Finely zest the lemon into the bowl, then whisk to combine.
- Make a well in the centre and add the eggs. Mix with a fork, then knead briefly until you have a smooth, supple dough that is not sticky; if it feels dry, keep kneading for a minute to help it come together.
- Cover the dough and let it rest at room temperature for 15 minutes. Meanwhile, finely chop the hazelnuts and set aside.
- Divide the dough into 6 pieces and roll each into a thin rope, about the thickness of your little finger. Cut into small nuggets, then roll quickly between your palms to form small balls.
- Pour the sunflower oil into a large pot and heat to 170°C (340°F). Fry the dough balls in batches for 3 to 4 minutes, stirring gently, until evenly golden and crisp. Lift out with a slotted spoon and drain in a sieve set over a bowl.
- Warm the honey in a saucepan over low heat just until fluid, then tip the fried balls into a large bowl. Pour over the warm honey and toss until glossy and evenly coated.
- Pile the struffoli into a mound on a serving plate. Sprinkle with the chopped hazelnuts and serve while the honey is still tacky.
Recipe notes
Tips
- Keep the oil temperature steady at 170°C (340°F); if it drops too low the struffoli will absorb oil, and if it is too hot they will colour before cooking through.
- Fry in small batches and stir gently so the balls cook evenly and do not stick together.
- If serving to young children, pregnant people, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark or another trusted food safety standard.
Substitutions
- Replace hazelnuts with almonds for a different nutty finish.
- Replace lemon with orange for a softer citrus note.
Storage
- Refrigerate up to 3 days
- Store in an airtight container at cool room temperature for up to 2 days, or in the fridge for up to 3 days. To refresh, warm briefly in a 150°C (300°F) oven for 5 to 7 minutes, then let stand for 5 minutes so the honey settles.
