Malabar Beef Curry with Coconut and Curry Leaves
Why this recipe works
- Layered aromatics: Mustard seeds, curry leaves, cinnamon, ginger and garlic build fragrance before the beef and coconut milk are added.
- Rich coconut sauce: A low simmer helps the coconut milk thicken gently around the beef without turning heavy.
- Deep, savoury finish: Slow cooking tenderises the beef while the onion, tomato and spices form a rounded curry base.

Adjust the heat
- For gentler heat: Use less dried chilli, or replace it with extra black pepper for warmth without the same sharp chilli heat.
- For more heat: Add extra dried chilli during the initial tempering so the heat infuses into the oil.
Ingredient notes
- Use stewing beef: A cut suited to slow cooking will become tender during the simmer and hold up well in the coconut gravy.
- Fresh curry leaves matter: Fresh curry leaves give the curry its distinctive fragrance, especially in the final tempering.
- Coconut milk texture: Fuller coconut milk gives a richer, silkier sauce; keep the heat gentle once it is added.
Timing notes
- Mostly gentle simmering: The active work is in building the spice base; most of the time is spent letting the beef cook slowly until tender.
- Let it stand briefly: Resting the curry off the heat before serving allows the spices to settle into the sauce.
Make-ahead tips
- Good made ahead: The curry keeps well in the fridge and often tastes more rounded after the flavours have had time to develop.
- Reheat gently: Warm on the hob over low heat until piping hot, loosening the sauce with a splash of water if needed.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge and reheat gently.

Ingredients
Instructions
- Thinly slice the onion. Finely grate the garlic and ginger, then roughly chop the tomatoes.
- Heat 1 tbsp of the coconut oil in a Dutch oven over medium heat. Add the mustard seeds and cook for 30 to 60 seconds until they start to pop, then add the dried red chilli, cinnamon stick and half the curry leaves and stir for 20 seconds until fragrant.
- Add the onion and cook for 8 to 10 minutes, stirring often, until softened and lightly golden. Stir in the garlic and ginger and cook for 1 minute.
- Stir in the tomatoes, ground coriander, ground turmeric and black pepper. Cook for 6 to 8 minutes until the tomatoes break down and the mixture looks thick and glossy.
- Add the beef and stir well to coat in the spiced tomato base. Cook for 4 to 5 minutes, stirring, until the beef loses its raw colour on the outside.
- Pour in the coconut milk and bring to a gentle simmer. Reduce the heat to low, cover and cook for 55 to 60 minutes, stirring every 15 minutes, until the beef is tender and the sauce has thickened slightly.
- In a small frying pan, heat the remaining 1 tbsp coconut oil over medium heat. Add the remaining curry leaves and cook for 30 to 45 seconds until glossy and very fragrant, then immediately scrape the tempering into the curry and stir through.
- Simmer uncovered for 3 to 5 minutes to bring everything together, then remove the cinnamon stick before serving. The curry should be rich and spoon-coating; if it is thicker than you like, loosen with a splash of water and warm through.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat low once the coconut milk goes in; a gentle simmer helps prevent splitting and keeps the sauce silky.
- For a deeper flavour, let the curry stand off the heat for 10 minutes before serving so the spices settle into the sauce.
- If serving vulnerable groups, ensure the beef is cooked until piping hot throughout and properly tender before eating.
Substitutions
- Replace Coconut oil with Extra-virgin olive oil for a less coconut-forward finish.
- Replace Dried red chili with 0.5 tsp Black pepper for gentler heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot, adding a splash of water if needed to loosen.
