Tarka Dal (Yellow Lentils with Tempered Spices)

In tarka dal, soft yellow lentils become a simple, comforting base for a final flourish of hot spiced fat. The lentils are simmered with turmeric, ginger and garlic until thick and spoonable, then finished with ghee scented with cumin, mustard seeds, dried chilli and curry leaves. That tempering gives the dish its recognisable aroma and savoury depth, while lemon adds a clean lift at the table. Served with basmati rice, it makes an easy vegetarian dinner that feels generous without being heavy, and the texture can be left rustic or whisked smoother before serving.

Why this recipe works

  • Naturally creamy texture: Yellow lentils soften quickly and break down into a thick, spoonable dal without needing cream.
  • Fragrant tempered spices: Frying the whole spices in hot ghee releases their aroma and gives the dal a vivid savoury finish.
  • Clean finish: A squeeze of lemon lifts the buttery tempering and keeps the lentils from tasting flat.

Adjust the heat

  • For less heat: Keep the dried chilli whole during tempering, then remove it before serving.
  • For more heat: Break the dried chilli before adding it to the ghee so it infuses the tempering more directly.
  • Keep the flavour balanced: Add lemon at the end to sharpen the dal and stop the chilli and ghee from feeling too heavy.

Ingredient notes

  • Choosing the lentils: Use yellow lentils that cook down easily; rinse them well so the finished dal tastes clean and has a smoother texture.
  • Curry leaves: Fresh curry leaves give the tempering its distinctive herbal aroma. Add them briefly at the end of frying so they perfume the ghee without scorching.
  • Lemon to taste: Add the lemon gradually after cooking, tasting as you go, as the right amount depends on the saltiness and richness of the dal.

Common mistakes

  • Burning the tempering: Keep the ghee at a moderate heat and pour the tempering over the dal as soon as the spices are fragrant.
  • Letting the dal get too thick: The dal should be thick but spoonable. If it tightens as it cooks, loosen it with a splash of hot water.
  • Forgetting final seasoning: Taste after adding the tempering and lemon, then adjust the salt if needed.

Make-ahead tips

  • Cook ahead: The dal can be cooked in advance and kept chilled in a sealed container for up to 3 days.
  • Reheat gently: Warm in a saucepan with a splash of water, stirring often, as the lentils thicken once chilled.
  • Freeze in portions: Freeze the cooled dal in portions for up to 2 months, then defrost overnight in the fridge before reheating.

  1. Rinse the basmati rice in cold water until the water runs mostly clear. Put it in a saucepan with 400 ml of the water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes to finish steaming.
  2. Meanwhile, rinse the yellow lentils well. Peel and finely grate the ginger, and peel and finely slice the garlic. Put the lentils in a large pot with the remaining 700 ml water, the ground turmeric, ginger, garlic and 1 tsp of the fine sea salt.
  3. Bring the lentils to a gentle simmer, skimming any foam from the surface. Cook for 18 to 22 minutes, stirring occasionally, until the lentils are very soft and the dal is thick but spoonable. If it gets too thick, loosen with a splash of hot water.
  4. In a small saucepan, heat the ghee over medium heat until shimmering. Add the cumin seeds and mustard seeds and cook for 30 to 60 seconds until the mustard seeds start to pop. Add the dried red chili and fresh curry leaf and fry for 20 to 30 seconds until very fragrant.
  5. Immediately pour the hot spiced ghee over the dal and stir through. Cut the lemon and squeeze some juice into the dal to taste. Serve the dal with the rice, with extra lemon at the table if you like.

Recipe notes

Tips

  • For a smoother, creamier texture, whisk the cooked dal vigorously for 20 to 30 seconds before adding the tempering.
  • Keep the heat moderate for the tempering so the spices toast without burning; once the curry leaves hit the ghee, pour it over straight away.
  • If you are cooking for anyone who is sensitive to chilli heat, leave the dried red chili whole and remove it before serving.

Substitutions

  • Replace ghee with unsalted butter for a similar rich finish.
  • Replace cumin seeds with ground cumin for a softer, less punchy tempering.
  • Replace basmati rice with long-grain white rice, adjusting the cooking time according to the packet.

Storage

  • Refrigerate up to 3 days
  • Cool the dal quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot, stirring often; the dal will thicken as it sits. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
