Vietnamese-French Lemongrass Chicken Baguette
Why this recipe works
- Crunch and softness: Crisp baguette, juicy chicken, crunchy pickles and fresh cucumber give the sandwich its defining contrast.
- Bright, balanced filling: Quick-pickled carrot and daikon cut through the richness of the mayonnaise and the savoury soy-glazed chicken.
- Fragrant savoury depth: Lemongrass, soy sauce, coriander and chilli build a filling that tastes fresh, aromatic and deeply savoury without a long cook time.
- Weeknight-friendly: The pickles and chicken marinade work while the other fillings are prepared, keeping the workflow efficient.

Authenticity notes
- Bánh mì style: The recipe follows the bánh mì idea of a crisp French-style baguette filled with Vietnamese flavours, fresh herbs, pickles and a savoury protein.
- Classic fresh elements: Pickled carrot and daikon, cucumber, coriander and chilli are recognisable bánh mì-style additions that bring crunch, freshness and heat.
Adjust the heat
- For less heat: Remove the chilli seeds or leave the chilli out entirely; the pickles and coriander will still keep the sandwich bright.
- For extra punch: Add more sliced chilli just before serving, rather than cooking it with the chicken, so the heat stays fresh and sharp.
- Keep it balanced: Use enough mayonnaise and pickles to soften the chilli’s intensity and keep the filling from tasting harsh.
Ingredient notes
- Prepare the lemongrass finely: Use only the tender inner part of the lemongrass and grate it finely so it flavours the chicken without leaving fibrous pieces.
- If using chicken breast: Chicken breast cutlets cook faster than thighs and can dry out more easily, so reduce the cooking time and watch them closely.
- Adjust the pickle brightness: If the pickles taste too sharp, let them drain well before assembling; if they taste flat, a little extra vinegar can lift them.
Make-ahead tips
- Keep fillings separate: Store the cooked chicken and drained pickles in separate airtight containers so the bread stays crisp when assembled.
- Assemble just before eating: Build the baguette at the last minute, especially once mayonnaise and pickles are involved, to avoid a soggy sandwich.
- Reheat the chicken properly: Warm the chicken in a frying pan over medium heat until piping hot, then add it to the baguette while the bread is still crisp.

Ingredients
Instructions
- In a mixing bowl, stir together the rice vinegar and caster sugar until the sugar dissolves. Peel the carrot and daikon radish, then grate them into long shreds. Toss the shreds in the pickling liquid and set aside for at least 20 minutes, stirring once or twice.
- Trim the lemongrass, then finely grate the tender inner part. In a bowl, mix the lemongrass with 30 ml of the light soy sauce, then add the chicken thighs and turn to coat. Leave to marinate while you prep the remaining fillings.
- Slice the cucumber into thin batons. Roughly chop the fresh coriander. Thinly slice the red chilli pepper, removing the seeds if you prefer less heat.
- Heat a frying pan over medium-high heat. Add the chicken in a single layer and cook for 4 to 5 minutes per side, until deeply browned and cooked through. Tip in the remaining 15 ml light soy sauce and turn the chicken in the pan for 30 seconds to glaze.
- Split the baguette lengthways, keeping one side attached if you like. Spread the mayonnaise over both cut sides. Pile in the lemongrass chicken, drain the pickled carrot and daikon well, then add the pickles, cucumber, coriander and chilli.
- Press the baguette closed and cut into two portions. Serve straight away while the bread is crisp and the chicken is warm.
Recipe notes
Tips
- For the best crunch, drain the pickled carrot and daikon thoroughly and gently squeeze out excess liquid before filling the baguette.
- If you have time, marinate the chicken for 30 minutes for a stronger lemongrass flavour.
- If serving to anyone vulnerable, make sure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner filling; reduce the cooking time slightly to avoid drying out.
- Replace Rice vinegar with Distilled white vinegar for a sharper, more assertive pickle.
- Replace Mayonnaise with Avocado oil mayonnaise for a lighter, cleaner finish.
Storage
- Refrigerate up to 2 days
- Store the cooked chicken and pickled carrot and daikon in separate airtight containers in the fridge. Assemble just before eating to keep the baguette crisp; reheat the chicken in a frying pan over medium heat until piping hot.
