Vegetarian Pisto with Fried Egg (Spanish Vegetable Stew)
Why this recipe works
- Slow-built savoury depth: Cooking the onion, pepper, aubergine and courgette in stages lets each vegetable soften properly before the tomatoes bring everything together.
- Gentle simmering: A low simmer helps the tomatoes break down and the vegetables turn silky rather than watery or harsh.
- Simple, satisfying finish: The fried egg turns the vegetable stew into a complete meal, while toasted bread makes the soft sauce easy to scoop up.

Authenticity notes
- Spanish home-style cooking: Pisto is commonly served as a soft vegetable stew, often with egg and bread, rather than as a thin sauce or soup.
- Regional variation: Vegetable combinations vary, but tomato, pepper, onion and olive oil are central to the dish’s recognisable flavour.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes break down more easily and give the pisto a naturally sweet, rounded base.
- Paprika choice: Smoked paprika adds gentle depth; sweet paprika gives a softer flavour if you prefer less smokiness.
- Keep the dice even: Similar-sized pieces of aubergine and courgette cook more evenly and help the stew settle into a cohesive texture.
Make-ahead tips
- Make the pisto ahead: The vegetable stew can be cooked in advance and stored without the eggs, then reheated gently before serving.
- Reheat gently: Warm it over a low heat until piping hot, adding a small splash of water if the tomatoes have thickened too much.
- Fry the eggs fresh: Cook the eggs just before serving so the whites stay tender and the edges remain crisp.

Ingredients
Instructions
- Prepare the vegetables: finely chop the onion, cut the red pepper into small dice, and cut the aubergine and courgette into 1.5 cm pieces. Finely chop the garlic and roughly grate the tomatoes, discarding the skins if you like.
- Warm 3 tbsp of the olive oil in a large frying pan over a medium heat. Add the onion and a pinch of salt, then cook for 6 to 8 minutes until soft and sweet but not browned.
- Stir in the red pepper and cook for 6 minutes until starting to soften. Add the aubergine and cook for 8 to 10 minutes, stirring often, until it begins to collapse and take on colour.
- Add the courgette and cook for 4 minutes, just to take the raw edge off. Stir in the garlic and smoked paprika and cook for 1 minute until fragrant.
- Add the tomatoes with a good pinch of salt and bring to a gentle simmer. Turn the heat to low and cook for 15 to 18 minutes, stirring now and then, until the tomatoes have broken down and the vegetables are silky and jammy.
- While the pisto finishes, toast the country bread. Taste the pisto and adjust the seasoning with a little more salt if needed, then keep it warm on a low heat.
- Heat the remaining 1 tbsp olive oil in a frying pan over a medium heat. Fry the eggs for 2 to 3 minutes until the whites are set and the edges are crisp, or cover the pan for 30 to 60 seconds if you want the tops set too.
- Spoon the pisto into bowls and top each with a fried egg. Serve straight away with the toasted country bread for dipping.
Recipe notes
Tips
- Keep the heat low once the tomatoes go in; a gentle simmer helps the vegetables turn silky without catching on the base of the pan.
- For a richer finish, drizzle a little extra virgin olive oil over the pisto just before serving.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until the yolks are fully set.
Substitutions
- Replace the country bread with sourdough bread for a tangier, chewier side.
- Replace the smoked paprika with sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 3 days
- Store the pisto (without the eggs) in an airtight container in the fridge. Reheat gently in a frying pan over a low heat until piping hot, adding a small splash of water if it looks dry, then fry fresh eggs to serve. Freeze the pisto in a sealed container for up to 2 months and defrost overnight in the fridge before reheating.
