Bavarese al Cioccolato (Italian Chocolate Bavarian Cream)
Why this recipe works
- Soft, creamy set: Gelatine gives the dessert structure while whipped cream keeps the texture lighter than a dense chocolate custard.
- Deep chocolate flavour: Dark chocolate melts into the warm custard, giving a smooth, cocoa-rich base with enough dairy to soften the intensity.
- Ideal for preparing ahead: The bavarese needs time to chill and set, making it well suited to preparing before a meal rather than at the last minute.

Timing notes
- Cool before folding: Let the chocolate custard cool until just warm before adding the whipped cream; if it is too hot, the cream will lose volume.
- Allow a full set: Chill until the bavarese is softly set and gently wobbly, especially if you plan to unmould it.
- Serve cold: Keep it refrigerated until serving, as the gelatine set softens when left at room temperature for too long.
Texture tips
- Strain for smoothness: Passing the custard through a sieve removes any small egg or chocolate lumps and gives the finished dessert a finer texture.
- Control the custard heat: Cook the custard gently and do not let it boil, as overheated egg yolks can curdle and make the bavarese grainy.
- Fold gently: Add the whipped cream in stages and fold rather than beat, so the mixture stays airy while becoming evenly combined.
Ingredient notes
- Use good baking chocolate: The chocolate is the main flavour, so choose one with a clean cocoa taste that melts smoothly into the custard.
- Adjust the chocolate style: Dark chocolate gives a deeper, less sweet finish; milk baking chocolate will make the dessert softer and sweeter.
- Soften the gelatine properly: Soak the sheets until fully pliable, then squeeze out excess water before stirring them into the hot custard.
Make-ahead tips
- Prepare in advance: The bavarese can be made ahead and kept covered in the fridge until ready to serve.
- Keep covered: Cover the glasses or moulds in the fridge so the dessert does not absorb other flavours.
- Finish just before serving: Dust with cocoa powder at the end so the top looks clean and the cocoa stays dry.

Ingredients
Instructions
- Soak the gelatin sheets in a bowl of cold water for 5 minutes until softened. Meanwhile, set out 4 moulds or glasses on a tray so they are ready to fill.
- Warm the milk in a saucepan over a low heat until steaming but not boiling. Stir in the vanilla extract, then take the pan off the heat.
- In a mixing bowl, whisk the egg yolks and caster sugar until slightly paler and smooth. Slowly whisk in the warm milk, then pour everything back into the saucepan.
- Cook the custard over a low heat, stirring constantly with a whisk, for 6 to 10 minutes until it thickens enough to coat the back of a spoon. Do not let it boil.
- Take the pan off the heat and add the dark baking chocolate, stirring until fully melted and glossy. Lift the gelatin from the water, squeeze out excess water, and stir it into the hot chocolate custard until dissolved.
- Strain the mixture through a sieve into a clean bowl to remove any lumps. Leave to cool for 20 to 25 minutes, stirring occasionally, until it is just warm and starting to thicken slightly.
- Whip the double cream to soft peaks. Fold the whipped cream into the cooled chocolate custard in two additions until no streaks remain.
- Divide the mixture between the moulds or glasses and level the tops. Chill for at least 3 hours, or until fully set and gently wobbly.
- To serve, dust each bavarese with cocoa powder. Serve straight from the glasses, or unmould onto plates if you used moulds.
Recipe notes
Tips
- For the smoothest set, let the chocolate custard cool until just warm before folding in the whipped double cream; if it is too hot, the cream will melt and the texture will be heavy.
- Keep the custard on a low heat and stir constantly; if it boils, the egg yolks can curdle and the bavarese will be grainy.
- Food safety: this dessert contains egg yolk; use pasteurised eggs if serving to pregnant people, young children, older adults, or anyone with a weakened immune system.
Substitutions
- Replace dark baking chocolate with milk baking chocolate for a sweeter, milder chocolate flavour.
- Replace vanilla extract with vanilla bean paste for a more pronounced vanilla note.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge to prevent it picking up odours. Serve cold straight from the fridge; do not leave at room temperature for long, as the set will soften.
