Sop Buntut (Indonesian Oxtail Soup)
Why this recipe works
- Clearer broth: Blanching and rinsing the oxtail before the main simmer helps remove impurities, giving the soup a cleaner finish.
- Aromatic depth: Garlic, ginger, cloves, cinnamon and white pepper season the broth without making it heavy or overly spiced.
- Hearty but balanced: Tender oxtail, potatoes and carrots make the soup satisfying, while lime, spring onion and fried onion keep each bowl bright.

Timing notes
- Add vegetables near the end: Carrots and potatoes only need the final simmer, so they stay tender rather than collapsing into the broth.
- Chilling improves the finish: If time allows, refrigerating the soup overnight makes it easy to lift off the set fat before reheating.
Authenticity notes
- Indonesian soup style: Sop buntut is typically served as a clear, aromatic broth rather than a thick stew, with the oxtail left on the bone.
- Serve with rice and lime: Jasmine rice, fried shallots and lime wedges are classic accompaniments that add body, crunch and brightness at the table.
Common mistakes
- Avoid a hard boil: Keep the soup at a gentle simmer; boiling too vigorously can cloud the broth and make the meat less tender.
- Cool before storing: Cool the soup quickly, then refrigerate or freeze in sealed containers and reheat until piping hot throughout.
Ingredient notes
- Use bone-in oxtail: Bone-in pieces give the broth body and richness while the meat becomes tender during the long simmer.
- Use whole spices: Whole cloves and cinnamon perfume the stock gently and can be removed before serving for a clean-tasting broth.

Instructions
- Put the oxtail in a stockpot and cover with cold water. Bring to the boil for 5 minutes, skimming any foam, then drain in a colander and rinse the oxtail and pot. This quick blanch keeps the soup clear.
- Return the oxtail to the pot and add the beef stock, garlic, ginger, whole cloves, cinnamon stick, fine sea salt, and white pepper. Bring to a gentle simmer, then cook partially covered for 1 hour 45 minutes, skimming occasionally, until the meat is very tender. If the liquid reduces too much, top up with a little water to keep the oxtail mostly submerged.
- While the soup simmers, cook the jasmine rice according to the packet instructions. Keep warm with the lid on.
- Peel the carrots and potatoes, then cut into bite-size chunks. Thinly slice the spring onion and cut the limes into wedges.
- Add the carrots and potatoes to the soup and simmer for 15 to 20 minutes, until the vegetables are tender but not falling apart. Taste and adjust with a little more fine sea salt and white pepper if needed. Remove and discard the cinnamon stick and whole cloves if you spot them.
- Ladle the soup into bowls and top with spring onion and fried onion. Serve with jasmine rice on the side and lime wedges for squeezing over at the table.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer very gentle; a hard boil will make the broth cloudy and can toughen the oxtail.
- For a cleaner finish, skim the surface fat during simmering, or chill the soup overnight and lift off the set fat before reheating.
- If serving vulnerable groups, ensure the soup is reheated until piping hot throughout before eating.
Substitutions
- Replace jasmine rice with basmati rice for a slightly drier, more separate grain.
- Replace fried onion with thinly sliced spring onion for a fresher finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently on the hob until piping hot; add a splash of water if the broth has reduced. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
