Malabar Fish Biryani
Why this recipe works
- Built-in depth: Caramelised onions, ginger, garlic, tomato, garam masala and herbs create a layered masala without needing a long cook.
- Gentle layered finish: Par-cooked rice finishes over the fish masala, allowing the grains to absorb flavour while keeping the layers distinct.
- Bright, balanced finish: Yogurt softens the spices, while lemon added at the end lifts the richness of the ghee and fish.
- Generous and satisfying: Rice, spiced fish and sweet onions make this a complete main dish suited to family-style serving.

Timing notes
- Stagger the preparation: Use the rice soaking time to slice the onions, prepare the aromatics and chop the herbs, which keeps the cooking sequence efficient.
- Rest before serving: The covered rest after cooking helps the steam settle, finishes the rice gently and makes the layers easier to lift through.
- Best eaten fresh: Fish biryani is at its best the day it is made, when the rice is fluffy and the fish is still tender.
Ingredient notes
- Choose firm white fish: Use a firm, skinless white fish that can hold its shape when folded through the masala and steamed with the rice.
- Soak and drain the rice well: Soaking helps the basmati cook evenly, while thorough draining prevents excess water from making the biryani heavy.
- Use fresh herbs at the end: Fresh coriander and mint bring lift to the warm spices, so avoid replacing them entirely with dried herbs.
Adjust the heat
- For a gentler biryani: Use fewer green chillies or remove the seeds before adding them to the masala.
- For more heat: Add extra green chilli or choose a hotter variety, keeping the final lemon and yogurt balance in mind.
- If it tastes too sharp or hot: A little extra yogurt-style richness or a gentler squeeze of lemon can soften the chilli without flattening the spices.
Serving ideas
- Serve with raita: A cooling cucumber or mint raita works well with the warm spices and citrusy finish.
- Add a crisp side: Serve with sliced cucumber, onion salad or a simple tomato salad to lighten the plate.
- Finish with herbs and lemon: A final scatter of fresh mint or coriander and a little lemon keeps the biryani bright at the table.

Ingredients
Instructions
- Rinse the basmati rice in several changes of cold water until the water runs mostly clear, then leave it to soak in fresh water for 20 minutes. Meanwhile, thinly slice the onions, finely grate the ginger, crush the garlic, and slit the green chilli peppers. Roughly chop the tomatoes, and pick the coriander and mint leaves.
- Bring a large pot of water to the boil. Drain the rice and boil it for 6 to 7 minutes until the grains are just tender on the outside but still firm in the centre. Drain well in a colander and set aside.
- Heat the ghee in a large frying pan over medium heat, then add the onions and cook for 18 to 22 minutes, stirring often, until deep golden and caramelised. Remove about one third of the onions to a bowl for layering later. Keep the remaining onions in the pan.
- Add the ginger, garlic and green chilli peppers to the pan and cook for 1 minute until fragrant. Stir in the tomatoes, ground turmeric and garam masala, then cook for 6 to 8 minutes until the tomatoes break down and the masala looks glossy. Take the pan off the heat and stir in the yogurt until smooth.
- Cut the white fish fillet into large chunks, then gently fold them into the masala so they are well coated. Return the pan to low heat and cook for 3 to 4 minutes, just until the fish begins to turn opaque at the edges. Do not stir too much to avoid breaking the fish.
- With the heat still low, spread half the par-cooked rice over the fish masala in an even layer. Scatter over half the reserved caramelised onions, half the coriander and half the mint. Add the remaining rice, then top with the remaining onions and herbs.
- Cover the pan tightly with a lid and cook on the lowest heat for 18 to 20 minutes until the rice is fully tender and the fish is just cooked through. Turn off the heat and rest, covered, for 10 minutes so the layers settle. Zest the lemon over the top, then squeeze in the juice to taste and gently lift through with a spoon to serve without breaking the fish.
Recipe notes
Tips
- Keep the fish in large chunks and use low heat for the final cook so it stays moist and does not flake into the rice.
- If your pan lid is not tight, place a clean tea towel under the lid to help trap steam and finish the rice evenly.
- If serving pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace yogurt with crème fraîche for a slightly richer, less tangy finish.
- Replace lemon with lime for a sharper citrus note.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat gently in a covered pan over low heat with a splash of water until piping hot, taking care not to overcook the fish.
