Holiday Flan (Festive Caramel Custard)

Silky caramel flan brings together a gently set egg custard and a glossy layer of amber caramel that turns into its own sauce when unmoulded. Popular across Latin American cooking and especially suited to celebrations, it is served cold in neat slices, with a creamy texture from condensed milk, evaporated milk and whole milk. The pleasure of the dessert is in its restraint: deep caramel notes, warm vanilla, a light wobble at the centre and a clean finish after chilling. A water bath helps keep the custard smooth, while careful caramel cooking gives the flan its festive, toasty edge.

Why this recipe works

  • Smooth custard: A mix of condensed milk, evaporated milk and whole milk gives the flan a rich, creamy texture without feeling heavy.
  • Gentle water-bath baking: Baking the custard in a water bath helps it set evenly and reduces the risk of a rubbery or cracked finish.
  • Caramel balance: Deep amber caramel brings a lightly bitter edge that balances the sweetness of the milk-based custard.

Timing notes

  • Chill before unmoulding: The flan needs at least 2 hours in the fridge, ideally 3, so the custard firms up and releases cleanly from the dish.
  • Serve cold: Flan is best served well chilled, when the custard is fully set and the caramel has softened into a pourable sauce.
  • Cool gradually: Let the baked custard cool to room temperature before refrigerating to help it settle without sudden temperature shock.

Texture tips

  • Whisk gently: Combine the eggs and milks without frothing; excess bubbles can leave small holes in the finished custard.
  • Look for a slight wobble: Remove the flan when the edges are set but the centre still trembles slightly, as it will continue to firm as it cools.
  • Use the water bath properly: Keeping hot water around the dish moderates the oven heat and encourages a silkier, more even set.

Common mistakes

  • Taking the caramel too far: Once the sugar reaches a deep amber colour, pour it immediately; darker caramel can turn harsh and bitter quickly.
  • Baking until fully firm: A custard that looks completely solid in the oven is likely to be overcooked by the time it cools.
  • Unmoulding too soon: Turning out the flan before it is fully chilled can cause it to slump or break rather than slice neatly.

Make-ahead tips

  • Make it in advance: Flan is well suited to making ahead because the chilling time improves its structure and makes serving easier.
  • Keep covered in the fridge: Store the flan covered and chilled for up to 3 days, keeping it on a rimmed plate if it has already been unmoulded.
  • Ideal next-day dessert: Preparing it the day before serving gives the custard plenty of time to set and the caramel time to loosen.

  1. Heat the oven to 160°C (320°F). Put a kettle on to boil, and set a deep baking dish aside for a water bath. Place an 20 to 23 cm round baking dish (or similar) nearby for the caramel.
  2. Tip the caster sugar into a saucepan and set over medium heat until it melts and turns a deep amber colour, swirling the pan occasionally. Immediately pour the caramel into the baking dish and quickly tilt to coat the base evenly. Set aside to cool and set.
  3. In a mixing bowl, whisk the eggs just until combined, then whisk in the sweetened condensed milk, evaporated milk, whole milk, vanilla extract and fine sea salt. Whisk gently to avoid creating lots of foam. Rest the mixture for 2 minutes so bubbles rise to the surface.
  4. Pour the custard mixture over the set caramel. Place the dish in the deep baking dish and add just-boiled water to come halfway up the sides. Bake for 45 to 55 minutes, until the edges are set and the centre still has a slight wobble.
  5. Lift the flan dish out of the water bath and cool to room temperature. Chill for at least 2 hours, ideally 3, until fully set and cold. This helps it unmould cleanly.
  6. Run a thin knife around the edge, then place a serving plate on top and invert in one confident motion. Leave it for 30 seconds so the caramel drips over the custard, then lift off the dish. Slice and serve cold.

Recipe notes

Tips

  • For the smoothest texture, whisk gently and avoid frothing the custard; if you see lots of bubbles, let it stand for a few minutes before baking.
  • The caramel should be a deep amber for a festive, toasty flavour, but take it off the heat as soon as it reaches that colour to prevent bitterness.
  • Food safety: this dessert contains eggs; serve well chilled and avoid serving to anyone who must not eat undercooked eggs unless you use eggs suitable for raw or lightly cooked preparations.

Substitutions

  • Replace vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.

Storage

  • Refrigerate up to 3 days
  • Store covered in the fridge. Flan is best served cold; if already unmoulded, keep on a rimmed plate to catch the caramel.
