Air Fryer Breaded Fish
Why this recipe works
- Crisp without deep-frying: The air fryer circulates high heat around the crumb coating, helping it turn golden while keeping the fish light.
- Fast weeknight cooking: Thin white fish fillets cook quickly, so the whole dish can be breaded and served in under 30 minutes.
- Lemon lifts the finish: A squeeze of lemon cuts through the savoury crumb and keeps the finished fish tasting fresh.

Texture tips
- For a crunchier coating: Use panko breadcrumbs instead of regular breadcrumbs for a lighter, more jagged crumb.
- Keep the coating dry: Pat the fish well before breading and cook in a single layer so steam can escape.
Common mistakes
- Avoid overcrowding: If the fillets overlap in the air fryer, the coating will soften rather than crisp. Cook in batches if needed.
- Do not cook past flaky: White fish dries out quickly, so remove it once the crumb is golden and the fish flakes easily.
Ingredient swaps
- Swap the citrus: Lime can replace lemon for a sharper, more aromatic finish.
- Change the white fish: Other firm, skinless white fish fillets can be used if they are similar in thickness to cod.
Make-ahead tips
- Reheat for crispness: Reheat leftovers in the air fryer at 190°C (375°F) until piping hot and crisp again.
- Best served fresh: The crumb is at its crispest straight after cooking, so serve as soon as the fish is ready.

Ingredients
Instructions
- Heat the air fryer to 200°C (390°F) for 3 minutes. Pat the cod dry with kitchen paper.
- Put the flour in a shallow bowl and season it with half the fine sea salt and half the black pepper. Whisk the eggs in a second bowl, and put the breadcrumbs in a third.
- Coat each fillet in the seasoned flour, then dip in the egg and finally press into the breadcrumbs until fully coated. Put the breaded fish on a plate while you finish the rest.
- Air-fry in a single layer for 10 to 12 minutes, turning carefully halfway through, until golden and the fish flakes easily. Work in batches if needed to avoid overcrowding.
- Cut the lemon into wedges. Serve the fish hot with the remaining fine sea salt and black pepper sprinkled over, and lemon to squeeze on top.
Recipe notes
Tips
- Dry fish helps the flour stick and keeps the coating crisp, so take a moment to pat the fillets well before breading.
- If the breadcrumbs look pale after cooking, give the fish another 1 to 2 minutes, keeping an eye on the colour.
- If serving anyone vulnerable to food poisoning, use pasteurised egg where available and ensure the fish is cooked until piping hot throughout.
Substitutions
- Replace breadcrumbs with panko breadcrumbs for a crunchier coating.
- Replace lemon with lime for a sharper, more aromatic citrus finish.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and crisp again.
