Pineapple Basil Smoothie
Why this recipe works
- Fresh, balanced flavour: Lime sharpens the sweetness of the pineapple and keeps the coconut milk from tasting too heavy.
- Creamy but refreshing: Coconut milk gives body and richness, while ice keeps the smoothie cold, frosty and light enough to drink straight away.
- Ready in minutes: Everything is blended rather than cooked, making this a fast drink with very little preparation or washing up.

Ingredient notes
- Use ripe pineapple: A ripe pineapple gives the smoothie natural sweetness and a fuller tropical flavour, reducing the need for extra sweetener.
- Fresh basil matters: Use fresh basil leaves only; dried basil will taste flat and can make the drink feel savoury rather than fragrant.
- Shake the coconut milk: Well-shaken coconut milk blends more evenly and helps avoid thin liquid at the top and thick cream left behind in the tin.
Texture tips
- Blend before adding ice: Blending the fruit, coconut milk, basil, lime and sugar first helps the basil break down properly before the ice thickens the mixture.
- Adjust the pour: If the smoothie is too thick, add a little more coconut milk gradually and blend again until it pours easily.
Make-ahead tips
- Best served immediately: The frosty texture is at its best straight from the blender, before the ice melts and the drink separates.
- Short chilling option: If making ahead, keep it sealed in the fridge and shake or re-blend briefly before serving to restore the texture.

Substitutions
- Replace palm sugar with maple syrup for a softer, caramel-like sweetness.
Storage
- Refrigerate up to 1 days
- Best served straight away. If needed, chill for up to 24 hours in a sealed container; shake or re-blend briefly to restore the texture.
