Mango Lime Coconut Smoothie
Why this recipe works
- Bright, refreshing balance: Lime cuts through the richness of the coconut milk and keeps the mango flavour lively.
- Naturally creamy: Ripe mango and coconut milk blend into a smooth, full-bodied drink without needing yoghurt or dairy.
- Ready in minutes: Everything is blended in one jug, making this a fast no-cook drink with very little washing up.

Ingredient notes
- Choose a ripe mango: A very ripe mango gives the smoothie sweetness, colour, and body, so less palm sugar is needed.
- Adjust the richness: Full coconut milk makes the smoothie creamier, while a coconut milk beverage gives a lighter, thinner result.
- Sweeten after blending: Taste once the lime is blended in, then add a little more palm sugar only if the mango needs it.
Texture tips
- For a thicker smoothie: Blend the ice at the end so it stays cold and gives the drink a slushy, frosty texture.
- For a smoother finish: Blend the mango, coconut milk, lime, and sugar fully before adding the ice.
Timing notes
- Best served immediately: The texture is coldest and thickest just after blending; it will loosen as the ice melts.
Make-ahead tips
- If making ahead: Refrigerate in a sealed container for up to 24 hours, then re-blend with ice to restore the frosty texture.

Instructions
- Peel the mango, cut the flesh away from the stone, and add it to a blender. Juice the lime and add the juice to the blender.
- Add the coconut milk and palm sugar, then blend until completely smooth. Add the ice cubes and blend again until thick, frosty, and evenly crushed.
- Taste and blend in a little more palm sugar if needed. Pour into a glass and serve immediately for the best texture.
Recipe notes
Tips
- Use a very ripe mango for sweetness and body, then let the lime do the balancing rather than adding lots of palm sugar.
- For a thicker smoothie, blend the ice cubes only at the end so it stays cold and the texture remains slushy.
Substitutions
- Replace Palm sugar with caster sugar, dissolving it briefly in the coconut milk before blending.
- Replace Coconut milk with coconut milk beverage for a lighter, less rich smoothie.
Storage
- Refrigerate up to 1 days
- Best served straight away. If needed, refrigerate for up to 24 hours in a sealed container, then re-blend with a few ice cubes to restore the texture.
