Crispy Chickpea Salad

Crispy chickpea salad brings the substance of roasted pulses to a fresh, chopped salad format. The chickpeas are seasoned with smoked paprika and cumin, then roasted until golden so they act almost like warm, savoury croutons against cool romaine, cucumber and sweet cherry tomatoes. A lemon, garlic and extra virgin olive oil dressing keeps the dish sharp and clean rather than heavy. It is best served straight after tossing, while the chickpeas still have their crunch, making it a practical vegan lunch or light dinner with plenty of texture.

Why this recipe works

  • Crisp chickpea topping: Drying the chickpeas well before roasting helps them turn golden and crunchy rather than soft.
  • Bright, balanced dressing: Lemon juice cuts through the olive oil and smoky spices, keeping the salad fresh rather than heavy.
  • Flexible serving: It works as a light lunch, a side salad, or a base for extra grains, herbs or vegetables.

Texture tips

  • For crispier chickpeas: Pat the chickpeas thoroughly dry after rinsing and spread them out on the tray so they roast instead of steaming.
  • Keep the crunch: Toss the chickpeas through the salad just before serving, as they soften once coated in dressing.

Make-ahead tips

  • Store separately: Keep the chopped vegetables, dressing and roasted chickpeas in separate containers for the best texture.
  • Re-crisp before serving: Refresh softened chickpeas on a baking tray at 200°C (390°F) for 6 to 8 minutes, then add them to the salad.

Ingredient notes

  • Smoked paprika: Smoked paprika gives the chickpeas a savoury, barbecue-like depth; sweet paprika makes the salad milder and less smoky.
  • Lemon sharpness: Add a little more lemon juice if the dressing tastes too soft or the salad needs a brighter finish.

  1. Heat the oven to 220°C (430°F). Drain and rinse the chickpeas, then pat them very dry with a clean tea towel so they crisp up properly.
  2. Tip the chickpeas onto a baking tray and toss with 1 tbsp of the extra virgin olive oil, the smoked paprika, ground cumin, 0.5 tsp of the fine sea salt and the black pepper. Roast for 22 to 26 minutes, shaking the tray halfway, until deeply golden and crisp.
  3. While the chickpeas roast, chop the romaine lettuce, halve the cherry tomatoes, and dice the cucumber. Put them into a large mixing bowl.
  4. Finely grate or crush the garlic into a small bowl, then whisk in the juice of the lemon, the remaining 2 tbsp extra virgin olive oil and the remaining 0.25 tsp fine sea salt. Taste and adjust with a little more lemon juice if you want it sharper.
  5. Add the hot roasted chickpeas to the salad and toss with the lemon dressing. Serve straight away while the chickpeas are still crisp.

Tips

  • For the crispest chickpeas, dry them thoroughly after rinsing and give the tray plenty of space so they roast rather than steam.
  • If you prefer a milder garlic flavour, rub the cut clove around the dressing bowl first, then whisk in the lemon juice and oil and discard the clove.

Substitutions

  • Replace extra virgin olive oil with olive oil for a slightly milder dressing.
  • Replace smoked paprika with sweet paprika for a less smoky flavour.

Storage

  • Refrigerate up to 2 days
  • Store the salad and chickpeas separately if possible, as the chickpeas soften once dressed. Re-crisp chickpeas on a baking tray at 200°C (390°F) for 6 to 8 minutes, then toss through just before serving.
