Besugo al Horno (Baked Sea Bream with Potatoes and Onion)
Why this recipe works
- One-tray cooking: The potatoes, onions and fish cook in the same roasting pan, keeping preparation simple and letting the juices season the vegetables.
- Built-in flavour: Olive oil, white wine, lemon and parsley give the mild sea bream brightness without overwhelming its delicate flavour.
- Simple but generous: Tender fish over soft, wine-scented potatoes makes the dish feel complete without needing a complicated sauce.

Timing notes
- Give the potatoes a head start: Pre-baking the potatoes and onions helps them soften before the fish is added, so the sea bream does not need to stay in the oven too long.
- Best served immediately: Whole baked fish is at its juiciest shortly after cooking, so serve it straight from the roasting tray with the pan juices spooned over.
Common mistakes
- Potatoes still firm: If the fish is ready before the potatoes are tender, lift the fish out and return the vegetables to the oven briefly.
- Dry fish: Bake only until the thickest part is opaque and flakes easily; leaving whole sea bream in the oven too long can dry the lean flesh.
Ingredient notes
- Whole sea bream: Ask the fishmonger to scale, gut and trim the fish so it is easier to season, bake and serve.
- Wine and lemon balance: Dry white wine gives the potatoes savoury depth, while lemon added at the end keeps the finished dish bright.
Serving ideas
- What to serve with it: A crisp green salad or simply cooked greens work well alongside the potatoes without making the meal heavy.
- Use the pan juices: Spoon the lemony wine juices from the tray over the fish and potatoes just before serving.

Instructions
- Heat the oven to 200°C (390°F). Slice the potatoes into thin rounds and the onion into thin slices, then spread them in a roasting pan.
- Drizzle the vegetables with 3 tbsp of the olive oil, then season with 1 tsp of the salt and 1/2 tsp of the pepper. Pour in the white wine and bake for 20 minutes, until the potatoes are starting to soften.
- Meanwhile, pat the sea bream dry and score each side with 2 to 3 shallow cuts. Season the fish inside and out with the remaining salt and pepper, then rub with the remaining 2 tbsp olive oil.
- Remove the tray from the oven and nestle the fish on top of the potatoes and onions. Slice half the lemon and tuck the slices around the fish, then return to the oven for 18 to 22 minutes, until the flesh flakes easily and the thickest part is opaque.
- Finely chop the parsley. Squeeze the remaining lemon over the fish and vegetables, scatter over the parsley, and serve straight from the roasting pan with the pan juices spooned over.
Recipe notes
Tips
- Ask your fishmonger to scale and gut the sea bream, and to trim the fins if needed; it makes serving much easier.
- If the potatoes are not quite tender when the fish is cooked, lift the fish to a plate, cover loosely, and return the tray to the oven for 5 to 10 minutes.
- If serving pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until the flesh is fully opaque and flakes easily.
Substitutions
- Replace Dry White Wine with water for an alcohol-free version; add a little extra Lemon at the end to keep the flavour bright.
- Replace Fresh parsley with Fresh dill for a softer, more aromatic finish.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the potatoes and onions in a 180°C (355°F) oven until piping hot; gently warm the fish alongside for the last few minutes to avoid drying it out.
