Sweet Potato Bravas with Smoky Tomato Bravas Sauce
Why this recipe works
- Caramelised edges: Roasting the sweet potato in wedges gives crisp, browned edges while keeping the centres tender.
- Balanced sweetness: Sherry vinegar and tomato acidity cut through the natural sweetness of the sweet potato.
- Creamy contrast: Garlic mayonnaise adds richness and a cool, smooth finish against the smoky bravas sauce.
- Easy to serve: The wedges work well as a tapas-style sharing dish, a vegetarian side, or a casual starter.

Authenticity notes
- A sweet potato variation: Traditional patatas bravas use white potatoes; this version keeps the bravas-style sauce and garlic mayonnaise but swaps in sweet potato for extra sweetness and colour.
- Bravas sauce and garlic mayo: The combination of smoky tomato sauce and creamy garlic mayonnaise is a recognisable bravas-style finish.
Ingredient notes
- Use smoked paprika: Smoked paprika is central to the sauce’s flavour, giving depth without relying on chilli heat.
- Balance with vinegar: Sherry vinegar brings a clean sharpness; add a little more only if the sauce tastes too sweet or flat.
- Raw egg mayonnaise: The garlic mayonnaise contains raw egg yolk, so use very fresh eggs and avoid serving it to higher-risk diners, or choose pasteurised or shop-bought garlic mayonnaise.
Texture tips
- Give the wedges space: Spread the sweet potato in a single layer with room between pieces so the edges roast rather than steam.
- Thicken the sauce properly: Simmer the tomato sauce until it coats a spoon; this keeps it from running straight off the wedges.
- For a smoother sauce: Crush the tomatoes against the side of the pan as they simmer, or cook a little longer for a more cohesive texture.
Make-ahead tips
- Make the sauce ahead: The bravas sauce can be prepared in advance and gently reheated before serving.
- Keep components separate: Store the wedges, sauce, and garlic mayonnaise separately so the sweet potato does not soften in the sauce.
- Re-crisp before serving: Reheat the wedges on a baking tray at 200°C (390°F) until hot and crisp at the edges.

Sweet potato bravas
Bravas sauce
Garlic mayonnaise
Instructions
- Heat the oven to 220°C (430°F). Cut the sweet potato into chunky wedges, roughly the same size so they roast evenly.
- Toss the wedges with the olive oil, smoked paprika, fine sea salt and black pepper. Spread out on a baking tray in a single layer.
- Roast for 28 to 32 minutes, turning once halfway, until deeply browned at the edges and tender all the way through. If your tray is crowded, use two trays so the wedges roast rather than steam.
- While the wedges roast, make the bravas sauce: warm the olive oil in a saucepan over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant, not coloured.
- Stir in the tomatoes, smoked paprika, sherry vinegar and fine sea salt. Simmer for 10 to 12 minutes, stirring now and then, until thick enough to coat a spoon.
- Make the garlic mayonnaise: in a mixing bowl, whisk the egg yolk with the Dijon mustard and a squeeze of lemon juice. Whisking constantly, drizzle in the sunflower oil very slowly at first, then a little faster once it thickens, until glossy and spoonable; season with a pinch of fine sea salt and more lemon juice to taste.
- Serve the hot sweet potato wedges with the bravas sauce spooned over or alongside. Finish with dollops of garlic mayonnaise.
Recipe notes
Tips
- For the best crisp edges, make sure the wedges are well spaced on the baking tray and the oven is fully preheated.
- If you prefer a smoother bravas sauce, simmer it a little longer and crush the tomatoes against the side of the pan with a wooden spoon.
- Food safety: the mayonnaise contains raw egg yolk, so it is best avoided by pregnant people, young children, older adults, and anyone with a weakened immune system.
Substitutions
- Replace sherry vinegar with red wine vinegar for a similar tang.
- Replace Dijon mustard with whole-grain mustard for a slightly coarser, more robust mayonnaise.
Storage
- Refrigerate up to 3 days
- Cool the wedges and bravas sauce, then refrigerate separately in sealed containers. Reheat the wedges on a baking tray at 200°C (390°F) for 8 to 12 minutes until hot and re-crisped; warm the sauce gently in a saucepan. Keep the garlic mayonnaise chilled and use within 24 hours.
