Light Spanish Flan (Caramel Custard)

Spanish flan sits somewhere between everyday pudding and elegant make-ahead dessert: a smooth baked egg custard set over a layer of dark amber caramel, then chilled and turned out so the sauce runs over the top. The character of the dish comes from careful, gentle cooking rather than richness — whole milk, eggs and vanilla form a delicate custard, while the caramel adds bittersweet depth. A water bath helps keep the texture silky and evenly set, with the centre retaining a slight wobble before chilling. Serve it cold, simply sliced, when you want a light but satisfying dessert with a clean finish.

Why this recipe works

  • Smooth custard texture: Gentle baking in a water bath helps the eggs set evenly without turning rubbery.
  • Balanced sweetness: The caramel adds depth and slight bitterness, keeping the custard from tasting overly sweet.
  • Ideal for preparing ahead: Chilling is part of the method, so the flan can be made in advance and turned out just before serving.

Timing notes

  • Chill until fully set: The flan needs enough time in the fridge to firm up properly before unmoulding.
  • Turn out just before serving: For the neatest finish, keep the custard in its dish until you are ready to plate it.

Texture tips

  • Keep the mixture gentle: Whisk only until the eggs are blended; too much air can leave bubbles and a pitted surface.
  • Look for a gentle wobble: Remove the flan when the centre still trembles slightly, as it will continue to set as it cools.

Common mistakes

  • Do not take the caramel too far: Once the sugar reaches a deep amber colour, pour it into the dish straight away so it does not become bitter.
  • Avoid boiling the milk: Warm the milk until steaming, then add it gradually to the eggs to keep the custard smooth.

Make-ahead tips

  • Make it ahead: The baked flan keeps well covered in the fridge for up to 3 days before serving.
  • Best after unmoulding: Once turned out, serve within 24 hours for the cleanest texture and presentation.

  1. Heat the oven to 160°C (320°F). Put a kettle of water on to boil, and set a baking dish large enough to hold a 1 litre baking dish or similar on the worktop.
  2. Put the caster sugar and 60 ml water in a saucepan over medium heat and cook without stirring until the sugar dissolves and turns a deep amber. Swirl the pan as needed for even colouring, then immediately pour the caramel into your baking dish and tilt to coat the base.
  3. Warm the whole milk in the same saucepan over low heat until steaming but not boiling. Take off the heat and stir in the vanilla extract.
  4. In a mixing bowl, whisk the eggs just until blended, without incorporating too much air. Slowly whisk in the warm milk in a steady stream.
  5. Pour the custard into the caramel-lined dish. Set the dish in the larger baking dish and carefully pour in enough hot water to come halfway up the sides of the flan dish.
  6. Bake for 40 to 55 minutes, until the custard is just set with a gentle wobble in the centre. Remove the flan dish from the water bath and leave to cool to room temperature.
  7. Chill for at least 2 hours, or until fully cold and set. To serve, run a thin knife around the edge, invert onto a plate, and let the caramel run over the top.

Recipe notes

Tips

  • For the smoothest custard, whisk gently and avoid frothing, as bubbles can create a pitted surface.
  • If the caramel starts to colour unevenly, lift the pan and swirl rather than stirring, which can encourage crystallisation.
  • Food safety: this dessert contains eggs; serve fully chilled and keep refrigerated, and avoid serving to vulnerable groups if you cannot ensure the eggs are from a safe, pasteurised source.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a slightly richer vanilla flavour.

Storage

  • Refrigerate up to 3 days
  • Keep the flan covered in the fridge and turn out just before serving for the neatest finish. If already turned out, store on a rimmed plate to catch the caramel and serve within 24 hours for best texture.
