Cacciucco (Tuscan Fish Stew)

Cacciucco is the robust fish stew associated with the Tuscan coast, where seafood is served in a garlicky tomato broth rather than a heavy sauce. Here, passata, dry white wine, chilli and olive oil create a savoury base with gentle heat and bright acidity, while the mixed seafood is added only at the end so it stays tender. The garlic-rubbed sourdough is more than a garnish: it soaks up the broth, gives the bowl structure and turns the stew into a complete, satisfying dinner. Fresh parsley keeps the finish clean and lively.

Why this recipe works

  • Deep tomato base: Simmering the passata with garlic, wine and chilli before adding the seafood gives the stew a rounded, savoury foundation.
  • Toast for structure: Garlic-rubbed sourdough soaks up the broth while keeping enough bite to contrast with the tender seafood.
  • Seafood cooked gently: Adding the seafood at the end protects delicate fish and shellfish from becoming tough or breaking apart.

Timing notes

  • Serve straight away: Cacciucco is best served as soon as the seafood is cooked, while the shellfish is still juicy and the toast has texture.
  • Build the base first: Most of the cooking time is for the tomato base; the seafood itself only needs a short, gentle simmer at the end.

Authenticity notes

  • Tuscan seafood stew: Cacciucco is associated with the Tuscan coast and is recognised for its tomato-rich broth, garlic, chilli and mixed seafood.
  • Bread in the bowl: Serving the stew over garlic-rubbed toast is central to the dish, turning the broth and bread into part of the same course.

Common mistakes

  • Boiling the seafood: Keep the stew at a bare simmer once the seafood is added; a hard boil can make it rubbery and break up delicate pieces.
  • Catching the tomato base: Stir occasionally while the sauce reduces and keep the heat moderate so the passata does not scorch on the bottom.

Ingredient swaps

  • Without wine: Use extra water instead of white wine and let the tomato base simmer fully so the garlic, chilli and passata still develop depth.
  • Bread option: Crusty white bread can stand in for sourdough if needed, as long as it is toasted firmly enough to hold the broth.

  1. Warm 3 tbsp of the extra virgin olive oil in a Dutch oven over medium heat. Thinly slice 4 cloves of the garlic and cook for 30 to 60 seconds until fragrant but not coloured. Stir in the chili flakes for 10 seconds.
  2. Pour in the dry white wine and let it bubble for 2 to 3 minutes to cook off the alcohol. Stir in the tomato passata, water and fine sea salt. Bring to a gentle simmer.
  3. Simmer the sauce gently, partially covered, for 35 to 40 minutes, stirring now and then, until it tastes rounded and slightly thickened. Keep the heat low so it does not catch on the bottom. Taste and adjust with a little more fine sea salt if needed.
  4. While the stew simmers, toast the sourdough bread until crisp and golden. Cut the remaining 2 cloves of the garlic in half and rub the cut side over the hot toast. Drizzle with the remaining 1 tbsp extra virgin olive oil.
  5. Add the seafood mix to the gently simmering tomato base and stir once to submerge. Cook at a bare simmer for 5 to 8 minutes, just until the fish is opaque and the shellfish is tender. Take off the heat as soon as it is done to avoid overcooking.
  6. Finely chop the fresh flat-leaf parsley and stir most of it into the stew. Ladle the cacciucco over the garlic-rubbed toast in warm bowls. Finish with the remaining parsley and serve straight away.

Recipe notes

Tips

  • Keep the stew at a gentle simmer once the seafood goes in; a hard boil will make it tough and can cause delicate pieces to break up.
  • If your seafood mix includes mussels or clams, discard any that do not open during cooking.
  • Seafood should be cooked until piping hot; this is especially important for anyone who is pregnant, elderly, or immunocompromised.

Substitutions

  • Replace Dry White Wine with a little extra Water for an alcohol-free version, and simmer the tomato base for the full time to develop flavour.
  • Replace Chili flakes with a smaller amount of Chili flakes for a milder heat.
  • Replace Sourdough bread with Crusty white bread if that is what you have.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the seafood does not break up; avoid boiling.
