Light Dutch Pea Soup with Smoked Sausage (Erwtensoep-Style)
Why this recipe works
- Naturally thick texture: Green split peas soften and break down as they simmer, giving the soup body without cream or blending.
- Vegetable-led depth: Leek, carrot and celeriac build a savoury base, while thyme and bay add gentle aromatic flavour.
- Smoky comfort: A small amount of smoked sausage stirred in at the end gives the soup its familiar Dutch character while keeping the finish lighter.

Timing notes
- Serve once fully hot: After adding the smoked sausage, warm the soup gently until the sausage is hot throughout and the soup is piping hot.
- Short prep, steady simmer: Most of the time is hands-off simmering, but the vegetables should be cut evenly so they soften at the same rate.
Texture tips
- Keep the simmer gentle: A steady, low simmer helps the peas soften smoothly; hard boiling can make the soup heavy or gluey.
- Adjust after storage: Split pea soup thickens as it cools, so loosen leftovers with a little extra vegetable stock when reheating.
Ingredient swaps
- Use smoked turkey: Smoked turkey gives a similar savoury, smoky note with a leaner finish.
- Swap the leek: Yellow onion can replace leek for a slightly sweeter base flavour.
Make-ahead tips
- Good for batch cooking: The soup keeps well in the fridge for up to 3 days and can be frozen in portions for longer storage.
- Reheat gently: Warm in a saucepan, stirring often and adding a splash of stock if needed, until piping hot.

Instructions
- Trim and rinse the leek well, then slice it. Peel the carrots and celeriac, then cut them into small, even dice so they cook at the same rate.
- Put the leek, carrots, celeriac, green split peas, vegetable stock, bay leaves and thyme into a large pot. Bring to the boil, then reduce to a gentle simmer.
- Simmer gently for 60 minutes, stirring every so often, until the peas are very tender and the soup is naturally thickened. If it starts to catch on the bottom, lower the heat and stir more frequently.
- Season with the fine sea salt and black pepper. Remove the bay leaves and thyme sprigs, then simmer for 5 minutes more to let the seasoning settle.
- Slice the smoked sausage and stir it into the soup. Warm gently for 8 to 10 minutes until the sausage is hot through and the soup is piping hot, then serve.
