Caldo Verde (Portuguese Kale and Potato Soup)
Why this recipe works
- Naturally smooth base: Blended potatoes create a creamy, velvety soup without needing cream or dairy.
- Simple layered flavour: Softened onion, garlic, olive oil and smoky chouriço build depth from a short ingredient list.
- Comforting but balanced: The rich potato base is lifted by thinly sliced kale, which adds colour, freshness and a gentle bite.

Authenticity notes
- Classic texture: Caldo verde is recognised for its smooth potato base and very finely shredded greens rather than chunky vegetables.
- How to serve it: It is commonly served hot with good bread, either as a starter or as a simple light meal.
Ingredient notes
- Slice the kale finely: Thin ribbons soften quickly in the hot soup and keep a brighter colour than larger pieces.
- Use a good olive oil: The final drizzle matters here, adding richness and a peppery finish to an otherwise simple soup.
- Chouriço and chorizo: Portuguese chouriço is traditional, but a smoky chorizo-style sausage will still give the soup its characteristic savoury note.
Texture tips
- For a smoother soup: Blend while the potatoes are still hot and fully tender, then return the soup to a gentle simmer.
- Keep the greens fresh: Add the kale near the end and cook only until tender so it stays bright rather than dull and soft.
Make-ahead tips
- Make ahead: The soup can be cooked in advance and refrigerated for up to 3 days, then reheated gently until piping hot.
- Freezing: Freeze in sealed containers for up to 2 months; defrost overnight in the fridge before reheating.
- Adjust after chilling: The potato base may thicken as it stands, so loosen it with a little water while reheating if needed.

Ingredients
Instructions
- Heat 2 tbsp of the extra virgin olive oil in a large pot over medium heat. Finely chop the yellow onion, slice the garlic, and cook with a pinch of the fine sea salt for 6 to 8 minutes until soft but not coloured.
- Peel the Yukon Gold potato and cut into small chunks. Add to the pot with the water, remaining fine sea salt and the black pepper, then bring to the boil. Reduce to a steady simmer and cook for 18 to 22 minutes, until the potatoes are very tender.
- Blend the soup until completely smooth using an immersion blender. Taste and adjust with a little more fine sea salt or black pepper if needed.
- Slice the chorizo sausage into thin rounds and stir into the soup. Simmer for 3 to 4 minutes to warm through and lightly perfume the broth.
- Remove any tough kale stems, then slice the leaves very thinly. Stir the kale into the hot soup and cook for 3 to 5 minutes, until just tender and bright green. Turn off the heat and stir in the remaining 1 tbsp extra virgin olive oil before serving.
Recipe notes
Tips
- Slice the kale as finely as you can so it softens quickly and keeps its colour.
- For the smoothest base, blend while the potatoes are still hot, then simmer gently after blending to avoid sticking.
- If serving vulnerable groups, make sure the soup returns to a gentle simmer after adding the chorizo sausage so it is piping hot throughout.
Substitutions
- Replace Kale with baby kale for a more delicate texture and quicker cooking.
- Replace Chorizo sausage with smoked turkey for a lighter but still smoky finish.
- Replace Extra virgin olive oil with olive oil for a milder, less peppery finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan until piping hot, adding a splash of water if it has thickened. Freeze for up to 2 months; defrost overnight in the fridge and reheat until piping hot.
