Aletria (Portuguese Vermicelli Custard Dessert)
Why this recipe works
- Custard-like texture: Tempered egg yolks enrich the milk and help the aletria set into a soft, creamy dessert rather than a loose milk pudding.
- Fragrant, balanced sweetness: Lemon zest and cinnamon cut through the richness of the milk, sugar, butter, and yolks.
- Gentle cooking: Low heat and steady stirring keep the milk smooth while allowing the vermicelli to soften and thicken the custard evenly.

Timing notes
- Chill until fully set: Aletria needs time in the fridge so the custard firms and the vermicelli absorbs the flavoured milk.
- Serve well chilled: The texture is best cold from the fridge, with the cinnamon added just before serving.
Texture tips
- Keep the custard smooth: After adding the egg yolks, use low heat and stir constantly; boiling can make the custard grainy or split.
- Avoid clumped vermicelli: Stir often as the pasta cooks so the strands separate and thicken the milk evenly.
Make-ahead tips
- Prepare in advance: Aletria is well suited to making ahead because it is served chilled and keeps covered in the fridge for up to 3 days.
- Cover before chilling: Cover the dishes once cooled to prevent the surface from drying out or absorbing fridge aromas.
Authenticity notes
- Portuguese Christmas classic: Aletria is closely associated with Portuguese Christmas tables, where it is commonly served cold and decorated with ground cinnamon.
- Milk, pasta, egg yolks: The recognisable character comes from cooking fine vermicelli directly in aromatic milk, then enriching it into a custard with yolks.

Ingredients
Instructions
- Pour the milk into a saucepan. Finely zest the lemon into the pan, then add the cinnamon sticks and salt.
- Set the pan over medium heat and bring the milk just to a gentle simmer, stirring occasionally so it does not catch. Reduce the heat to low and let it infuse for 5 minutes.
- Add the vermicelli and cook gently, stirring often, for 6 to 8 minutes until the pasta is tender and the milk has thickened slightly. Keep the heat low so the milk does not boil over.
- Stir in the caster sugar and butter until fully dissolved and the mixture looks glossy. Remove the pan from the heat and fish out the cinnamon sticks.
- In a mixing bowl, whisk the egg yolks until smooth. Ladle in a little of the hot milk mixture while whisking constantly to temper the yolks.
- Pour the tempered yolks back into the saucepan and return to a low heat. Cook for 3 to 5 minutes, stirring continuously with a spatula, until the custard thickens and coats the back of a spoon; do not let it boil.
- Divide the aletria between serving dishes and smooth the tops. Cool to room temperature, then chill until fully set and cold.
- Just before serving, dust the tops evenly with the ground cinnamon. Serve well chilled.
Recipe notes
Tips
- Keep the heat low after adding the egg yolks; boiling can cause the custard to split or turn grainy.
- Stir frequently while the vermicelli cooks so it does not clump and the milk thickens evenly.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk.
Substitutions
- Replace caster sugar with granulated sugar; it will take a little longer to dissolve, so stir well before adding the egg yolks.
- Replace whole milk with milk and cream for a richer custard-like texture.
Storage
- Refrigerate up to 3 days
- Cover and refrigerate for up to 3 days. Serve straight from the fridge; if it thickens too much, let it sit at room temperature for 10 minutes before serving.
