Karjalanpiirakka (Finnish Rye Pasties with Rice Filling)
Why this recipe works
- Creamy rice filling: Short-grain rice simmered slowly in milk releases starch, giving the filling a thick, spoonable texture.
- Recognisable rye crust: The thin rye dough and hand-crimped edges create the classic open shape and lightly firm bite.
- Rich, savoury finish: Egg butter adds softness, richness and seasoning, balancing the earthy rye and mild rice filling.
- Good for preparing ahead: The baked pasties reheat well, and the egg butter can be stored separately until serving.

Timing notes
- Cool the filling before shaping: The rice filling should be at room temperature before it goes into the rye shells; hot filling makes the dough harder to handle and crimp neatly.
- Rest the rye dough: A short rest helps the firm dough relax, making it easier to roll into thin ovals without tearing.
- Serve warm: Karjalanpiirakka are best served warm, especially with egg butter spooned over while the filling is still soft.
Common mistakes
- Cooking the milk too hard: Keep the rice on a very low heat once the milk is added, stirring often so it thickens without catching on the base of the pan.
- Letting the rye dough dry out: Keep unused dough pieces covered while rolling and filling; dry rye dough becomes brittle and difficult to crimp.
- Overfilling the shells: A moderate line of filling leaves enough border for folding and helps the pasties hold their shape in the oven.
Authenticity notes
- Karelian style: The defining features are the thin rye shell, open oval shape and rippled crimped edge surrounding a soft grain filling.
- Egg butter pairing: Egg butter is the classic topping, adding richness and a savoury finish without hiding the flavour of the rye crust.
- Rye flour balance: A little plain flour makes the dough easier to roll, while an all-rye version tastes more robust but is more fragile.
Make-ahead tips
- Store pasties and egg butter separately: Keep cooled pasties and egg butter in separate sealed containers so the topping stays spreadable and the crust reheats cleanly.
- Reheat on a tray: Warm refrigerated pasties on a baking tray at 200°C (390°F) until hot, then serve with egg butter at room temperature.
- Freeze without the topping: Baked pasties freeze well without egg butter and can be reheated from frozen at 200°C (390°F).

Instructions
- Make the rice filling: bring the water to a simmer in a saucepan, stir in the rice and cook for 5 minutes, stirring often. Add the milk and 2 tsp of the salt, then cook on a very low heat for 35 to 45 minutes, stirring regularly, until thick and spoonable. Scrape into a bowl and cool to room temperature, about 30 minutes.
- Meanwhile, make the crust: mix the rye flour, plain flour and 1 tsp salt in a bowl. Add the water and stir, then knead briefly until you have a firm, smooth dough; if it feels dry, wet your hands and knead again. Cover and rest for 15 minutes so the dough relaxes.
- Heat the oven to 250°C (480°F) and set a baking tray inside to heat up. Divide the dough into 10 equal pieces and keep them covered as you work. Roll each piece into a thin oval, about 1 to 2 mm thick.
- Spoon a line of cooled rice filling down the centre of each oval, leaving a 1.5 to 2 cm border. Fold the long sides up around the filling and crimp the edges with your fingers into a neat, rippled rim. Transfer the pasties to the hot tray.
- Bake for 12 to 15 minutes until the crust is set and lightly blistered at the edges. If any pasty opens, pinch it back together while still hot. Cool on the tray for 5 minutes.
- While the pasties bake, make the egg butter: put the eggs in a saucepan, cover with water and bring to the boil. Simmer for 9 minutes, then cool under cold running water and peel. Finely chop the eggs and mix with the softened butter and a pinch of salt until spreadable.
- Serve the karjalanpiirakka warm with egg butter spooned over the top. For a softer crust, brush the hot pasties lightly with a little milk and cover with a clean tea towel for 10 minutes before serving. Offer extra egg butter on the side.
Recipe notes
Tips
- Keep the dough pieces covered while you roll and fill, as rye dough dries quickly and becomes harder to crimp.
- Stir the rice often as it cooks in milk, especially towards the end, to prevent it catching and to keep the filling creamy.
- Eggs should be cooked until the yolks are set; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for raw or lightly cooked preparations.
Substitutions
- Replace Plain flour with more Rye flour for a more robust crust, but roll it slightly thicker as it will be more fragile.
- Replace Whole milk with a 50:50 mix of Whole milk and Water for a lighter filling, but cook a few minutes longer to thicken.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate pasties and egg butter separately in sealed containers. Reheat pasties on a baking tray at 200°C (390°F) for 6 to 8 minutes until hot; bring egg butter to room temperature before serving. Freeze baked pasties (without egg butter) for up to 2 months and reheat from frozen at 200°C (390°F) for 10 to 12 minutes.
