Kersenvlaai (Dutch Cherry Tart)

Kersenvlaai is a traditional Dutch fruit tart made with a soft, lightly enriched yeasted dough rather than shortcrust pastry. The dough is pressed into a shallow tin to form a tender base and rim, then filled with ripe sweet cherries scented with vanilla and finished with a simple lattice. Baked until the edges are deep golden and the fruit bubbles, it has a distinctive combination of bread-like softness, juicy cherry filling and gentle sweetness. It is best cooled fully before slicing, making it ideal for tea, coffee or a relaxed dessert.

Why this recipe works

  • Yeasted vlaai base: A lightly sweet dough gives the tart its characteristic soft, bread-like texture rather than a crisp pastry shell.
  • Soft base, juicy topping: The dough bakes up tender while the cherries soften and bubble, creating a clean contrast between crumb and fruit.
  • Slices best when cooled: Cooling allows the crumb to set and the cherry juices to thicken, making the tart easier to cut and serve.

Authenticity notes

  • Yeasted rather than shortcrust: Vlaai is recognised for its soft yeasted base, which makes it closer to a lightly enriched bread dough than a classic pastry tart.
  • Serve with coffee or tea: A cooled wedge of vlaai is well suited to a simple coffee-table or afternoon tea serving.

Timing notes

  • Allow the dough to rise properly: The first rise should make the dough noticeably doubled, while the second prove should leave the assembled tart slightly puffy before baking.
  • Cool before slicing: Cutting too soon can make the cherry filling run and compress the soft crumb, so let the tart cool completely for the neatest wedges.

Texture tips

  • Control juicy cherries: If the cherries release a lot of liquid after pitting, lift them onto the dough and leave excess juice behind to help protect the base.
  • Add butter gradually: Working the softened butter into the dough a little at a time helps it incorporate evenly and keeps the crumb tender.

Make-ahead tips

  • Good for advance baking: The tart can be baked ahead and kept covered in the fridge, then sliced once fully chilled and set.
  • Refresh gently: Warm slices in a 160°C (320°F) oven until just heated through to revive the dough without drying out the fruit.

  1. Warm the milk until just lukewarm, then whisk in the caster sugar and yeast. Leave for 5 minutes until slightly foamy.
  2. Tip the flour and salt into a mixing bowl and make a well in the centre. Add the milk mixture and the egg, then mix to a shaggy dough.
  3. Knead for 6 to 8 minutes until smooth and elastic, then knead in the softened butter a little at a time until fully incorporated. Cover and leave to rise in a warm place until doubled in size.
  4. Meanwhile, pit the cherries and toss them with the vanilla extract. Set aside at room temperature.
  5. Grease a shallow 24 cm cake tin with a little of the butter from the measured amount, then lightly flour it. Punch down the dough, reserve about a quarter for a simple lattice, and press the rest evenly into the tin, pushing it up the sides to form a rim.
  6. Spread the cherries evenly over the base. Roll out the reserved dough and cut into strips, then lay them over the fruit in a lattice pattern and press the ends onto the rim.
  7. Cover and leave to prove until slightly puffy. Heat the oven to 190°C (375°F).
  8. Bake for 30 to 35 minutes until deep golden and the fruit is bubbling at the edges. Cool in the tin for 15 minutes, then transfer to a rack to cool completely before slicing.

Recipe notes

Tips

  • If the cherries are very juicy, let them sit for 5 minutes after pitting, then spoon them onto the dough leaving any excess juice behind to help prevent a soggy base.
  • For neat slices, cool the vlaai completely before cutting so the crumb sets and the fruit thickens slightly.
  • If you are pregnant, elderly, or immunocompromised, use pasteurised egg and ensure the tart is baked until the centre is piping hot.

Substitutions

  • Replace whole milk with lactose-free milk for a similar richness.
  • Replace vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.

Storage

  • Refrigerate up to 3 days
  • Store covered in the fridge for up to 3 days. Freeze slices well wrapped for up to 2 months; defrost in the fridge, then warm in a 160°C (320°F) oven for 8 to 10 minutes to refresh.
