Gigantes Plaki (Greek Baked Giant Beans in Tomato Sauce)

In gigantes plaki, large butter beans are treated as the main event rather than a side: slowly softened, then baked in a tomato-rich sauce with olive oil, onion, carrot, celery, garlic and oregano. The dish is distinctly Greek in character, with the beans becoming creamy and substantial while the sauce reduces around them until savoury, glossy and lightly caramelised at the edges. It is generous without feeling heavy, and is just as good warm as it is at room temperature, where the olive oil, herbs and parsley come through clearly. Serve with a simple salad, bread or other mezze-style dishes.

Why this recipe works

  • Built-in depth: The beans first simmer until tender, then bake in tomato, olive oil, vegetables and herbs so the sauce reduces and coats them fully.
  • Hearty but simple: Butter beans give the dish a satisfying, creamy bite without needing meat, dairy or complex seasoning.
  • Improves as it rests: The finished beans hold well and are especially good at room temperature, when the olive oil, tomato and herbs taste more settled.

Timing notes

  • Plan for soaking: The dried beans need a long soak before cooking, so start them the night before for the most reliable texture.
  • Rest before serving: A short rest after baking lets the sauce settle around the beans and makes the dish easier to serve.
  • Serve warm or room temperature: Gigantes plaki does not need to be served piping hot; the flavour is often clearer once it has cooled slightly.

Texture tips

  • Cook the beans properly first: Simmer the beans until just tender before they go into the oven, as baking will soften them further but will not rescue undercooked beans quickly.
  • Let the sauce reduce: Bake until the tomato sauce is thick and glossy rather than watery, adding only a splash of water if the dish starts to dry out.
  • Stir gently: Turn the beans carefully during baking so they stay mostly intact while still absorbing the sauce.

Ingredient notes

  • Choose large dried beans: Traditional gigantes are large white beans; dried butter beans are a practical substitute and give the right soft, substantial texture.
  • Use good olive oil: Extra virgin olive oil is central to the flavour of the sauce, so use one with a clean, fruity character if possible.
  • Finish with fresh herbs: Dried oregano gives the sauce its savoury backbone, while fresh parsley added at the end keeps the finished dish bright.

Make-ahead tips

  • Good the next day: The beans keep their texture well and the tomato-herb sauce becomes more rounded after a night in the fridge.
  • Reheat gently: Warm the beans covered in a 180°C (355°F) oven or gently on the hob with a splash of water to loosen the sauce.
  • Freeze in portions: Cool completely, then freeze in sealed portions; defrost overnight in the fridge before reheating.

  1. Put the butter beans in a large bowl, cover with plenty of cold water, and leave to soak for 10–12 hours. Drain and rinse well in a colander.
  2. Tip the soaked beans into a large pot and cover with fresh water by a few centimetres. Bring to the boil, then reduce to a gentle simmer and cook for 45–60 minutes until tender but not falling apart; skim any foam if needed. Drain, reserving 300 ml of the cooking water.
  3. Heat the oven to 180°C (355°F). Finely chop the onion, cut the carrots into small chunks, slice the celery, and thinly slice the garlic.
  4. Warm the olive oil in a large pot over medium heat. Add the onion, carrots and celery with a pinch of the salt and cook for 8–10 minutes until softened and glossy. Stir in the garlic and cook for 1 minute until fragrant.
  5. Add the chopped tomatoes, bay leaves, dried oregano, remaining salt and the black pepper. Pour in the reserved bean cooking water and bring to a gentle simmer for 10 minutes to meld the flavours. Stir in the drained beans and simmer for 5 minutes so they are well coated.
  6. Tip everything into a baking dish and level the top so the beans sit mostly under the sauce. Bake for 45–55 minutes, stirring once halfway through, until the sauce is thick and the top is lightly caramelised. If it looks dry at any point, add a splash of water and continue baking.
  7. Finely chop the parsley and stir most of it through the beans, reserving a little to finish. Rest for 10 minutes so the sauce settles, then scatter over the remaining parsley. Serve warm or at room temperature.

Tips

  • For the best texture, cook the beans until just tender before baking; they will soften a little more in the oven.
  • If the sauce thickens too quickly in the oven, loosen it with a little water and stir gently to avoid breaking the beans.
  • This is ideal served at room temperature, which lets the olive oil and herbs come through more clearly.

Substitutions

  • Replace Fresh parsley with Fresh dill for a more aniseed, taverna-style finish.
  • Replace Dried oregano with Fresh oregano for a softer, greener herb note.
  • Replace Yellow onion with Red onion for a slightly sweeter, milder base.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container for up to 4 days. Reheat in a 180°C (355°F) oven, covered, for 20–25 minutes until piping hot, or warm gently on the hob with a splash of water. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
