Indian Masala Pasta
Why this recipe works
- Layered masala base: Softened onion, garlic, ginger and briefly bloomed spices build a rounded savoury base before the tomatoes are added.
- Balanced tomato sauce: Simmering the chopped tomatoes concentrates their flavour while the warm spices soften the acidity.
- Weeknight-friendly: The sauce cooks in the time it takes to boil the pasta, keeping the method efficient without relying on a ready-made sauce.

Adjust the heat
- For less heat: Reduce the Kashmiri chilli powder and lean on the garam masala for warmth rather than sharp spice.
- For more heat: Add extra chilli gradually while the tomato sauce simmers, tasting before adding more so the spice stays balanced.
Ingredient notes
- Kashmiri chilli: Kashmiri chilli powder brings colour, warmth and gentle heat; very hot chilli powders will change the balance of the dish.
- Fresh coriander: Stirring some coriander in off the heat keeps the flavour bright, while the final garnish adds freshness.
Common mistakes
- Do not catch the spices: Once the chilli powder and garam masala go in, stir constantly and cook only briefly before adding the tomatoes.
- Keep the sauce glossy: If the masala becomes too thick, loosen it with reserved pasta water so it coats the penne rather than clumping.
Make-ahead tips
- Make the masala ahead: The tomato masala can be cooked in advance, then reheated gently before tossing with freshly cooked pasta.
- Reheat with moisture: Warm leftovers in a frying pan over medium-low heat with a splash of water, stirring often until piping hot.

Instructions
- Bring a large pot of water to the boil and season it with 1 tsp of the fine sea salt. Cook the penne until just al dente, then drain, reserving a mug of the cooking water.
- Meanwhile, finely chop the yellow onion. Peel and finely grate the garlic and ginger root, and roughly chop the fresh coriander.
- Heat the sunflower oil in a large frying pan over medium heat. Add the onion and cook for 6 to 8 minutes until soft and lightly golden, stirring regularly.
- Stir in the garlic and ginger and cook for 1 minute until fragrant. Add the ground Kashmiri chili and 1 tsp of the garam masala and cook for 30 seconds, stirring so the spices do not catch.
- Tip in the canned chopped tomatoes and bring to a gentle simmer. Cook for 8 to 10 minutes until the sauce thickens and the oil starts to separate slightly at the edges; season with the remaining 1 tsp fine sea salt.
- Add the drained pasta to the pan and toss well to coat. Loosen with a splash of the reserved pasta water until glossy and saucy, then cook for 1 to 2 minutes so the pasta absorbs the masala.
- Take off the heat and stir in the remaining 1 tsp garam masala and most of the fresh coriander. Serve straight away, topped with the remaining coriander.
Recipe notes
Tips
- Keep the sauce at a gentle simmer so it reduces without catching; if it thickens too quickly, add a little reserved pasta water to bring it back to a coating consistency.
- For a fresher finish, stir in half the coriander off the heat and use the rest on top so the flavour stays bright.
Substitutions
- Replace penne with angel hair pasta; cook it for a shorter time, then toss gently so it does not break up.
- Replace sunflower oil with olive oil for a fruitier base.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan over medium-low heat with a splash of water until piping hot, stirring often to prevent sticking.
