Holiday Latin Table (Festive Meal Spread)

A festive Latin American-style table is less a single dish than a generous, mix-and-match spread: carved roast chicken, rice, beans, sweet plantain, fresh salsa and a vivid green sauce for spooning over everything. Here, cumin, garlic and lime give the chicken a savoury citrus edge, while aji verde brings creamy heat and coriander brightness. The sides keep the plate satisfying and varied, with fluffy rice, glossy black beans, caramelised plantain and juicy tomato-red onion salsa. It is designed for sharing, letting each person build a plate with as much sauce, freshness and sweetness as they like.

Why this recipe works

  • Layered flavour: Cumin, garlic and lime season the chicken, while aji verde, salsa and beans add brightness, freshness and savoury depth.
  • Strong texture contrast: Crisp roast chicken skin, fluffy rice, creamy beans, caramelised plantain and juicy salsa keep the plate varied.
  • Built for sharing: Serving everything as separate components lets diners adjust sauce, salsa, beans and plantain to suit their plate.

Adjust the heat

  • Make the aji verde milder: Remove the jalapeño seeds before blending, or use less chilli and balance the sauce with extra lime to taste.
  • Increase the heat: Keep the jalapeño seeds in the sauce, or blend in more chilli gradually until the heat feels right.
  • Keep it bright, not harsh: If the sauce tastes too fiery, add more coriander, lime or mayonnaise-style richness to round out the chilli.

Ingredient notes

  • Choose ripe plantain: A ripe plantain with yellow skin and dark patches will fry sweeter and softer than a green one.
  • Use lime to lift the plate: The roast chicken, beans and sauce all benefit from citrus, so taste and brighten with lime where needed.
  • Keep the salsa juicy: Use ripe tomatoes and avoid draining the mixture too much; the juices help freshen the rice and chicken.

Make-ahead tips

  • Blend the sauce ahead: The aji verde can be made in advance and kept chilled, then stirred before serving.
  • Store the spread in parts: Keep the chicken, rice, beans, salsa and sauce in separate containers so the textures stay cleaner.
  • Reheat only the hot components: Warm the chicken, rice and beans in a 180°C (355°F) oven or microwave until piping hot, then add the chilled salsa and aji verde.

Common mistakes

  • Skipping the rest: Carving the chicken straight from the oven can make the juices run out; rest it before slicing.
  • Frying plantain too hot: Keep the pan at medium heat so the outside caramelises while the centre has time to soften.
  • Wet rice: Rinse the rice well and let it steam off the heat before fluffing so it stays light rather than clumpy.

  1. Heat the oven to 200°C (390°F). Pat the chicken dry and place it in a roasting pan. Stir 2 tbsp of the olive oil with the ground cumin, 2 grated garlic cloves and the zest and juice of 1 lime, then rub it all over the chicken.
  2. Roast for 70 to 80 minutes, until the skin is deeply golden and the juices run clear when you pierce the thickest part of the thigh. If it browns too quickly, loosely cover with foil for the final 20 minutes. Rest the chicken for 10 minutes before carving.
  3. While the chicken roasts, rinse the long-grain white rice until the water runs mostly clear. Cook it in a saucepan with a tight-fitting lid using your usual method until tender, then cover and leave to steam off the heat for 10 minutes. Fluff with a fork.
  4. Drain and rinse the canned black beans, then warm them in a saucepan with 1 tbsp olive oil, 2 crushed garlic cloves, a squeeze of lime and a pinch of salt. Cook on low for 6 to 8 minutes, stirring occasionally, until hot and glossy. Keep warm with the lid on.
  5. Make the aji verde: in a blender, combine the mayonnaise, jalapeno pepper, most of the fresh coriander (reserve a little for serving), white wine vinegar, the juice of 1 lime, 1 crushed garlic clove and 1 tbsp olive oil. Blend until smooth and speckled green, then taste and add more lime if you want it brighter. Spoon into a bowl.
  6. For the salsa, dice the tomato and finely chop the red onion, then toss with the remaining lime juice and a little of the reserved coriander. Set aside to macerate while you cook the plantain. Keep it juicy rather than dry.
  7. Peel the plantain and cut into 1 cm thick slices. Fry in a frying pan with the remaining olive oil over medium heat for 2 to 3 minutes per side, until caramelised and tender. Transfer to a plate and season with a pinch of salt.
  8. Carve the chicken and arrange it on a platter with the rice, black beans, plantain and salsa. Serve the aji verde alongside and scatter over the remaining coriander. Let everyone build their plate at the table.

Recipe notes

Tips

  • For extra-crisp skin, pat the chicken very dry before roasting and leave it uncovered in the fridge for up to 8 hours if you have time.
  • If you prefer a milder aji verde, remove the jalapeno seeds before blending.
  • When frying plantain, keep the heat at medium so it caramelises without burning before the centre turns tender.

Substitutions

  • Replace white wine vinegar with lime juice for a sharper, citrus-led aji verde.
  • Replace mayonnaise with Greek yogurt for a lighter, tangier aji verde.

Storage

  • Refrigerate up to 3 days
  • Store chicken, rice, beans, salsa and sauce separately where possible. Reheat chicken, rice and beans in a 180°C (355°F) oven or in the microwave until piping hot; keep the salsa and aji verde chilled and add after reheating.
