Japanese Salmon Rice Bowl with Soy and Mirin
Why this recipe works
- Glossy savoury-sweet glaze: Soy sauce brings salt and umami, while mirin adds sweetness and sheen without needing a long marinade.
- Balanced textures: Crisp salmon skin, soft rice, creamy avocado and cool cucumber keep each bowl varied and fresh.
- Weeknight-friendly timing: The rice steams while the salmon and toppings are prepared, keeping the cooking process efficient.

Timing notes
- Let the rice steam off the heat: The covered resting time helps short-grain rice finish cooking evenly and become tender without turning wet.
- Serve soon after glazing: The salmon is best while the skin is still crisp and the soy–mirin glaze is glossy.
Ingredient notes
- Use short-grain rice: Short-grain rice gives the bowl the soft, slightly sticky texture expected in Japanese-style rice dishes.
- Choose firm-ripe avocado: Avocado should be soft enough to eat but firm enough to slice cleanly and hold its shape in the bowl.
Common mistakes
- Do not overheat the glaze: Soy and mirin can catch quickly, so keep the pan at a moderate heat once the glaze is added.
- Avoid drying out the salmon: Cook just until the flesh is opaque and piping hot throughout; a gentle finish keeps it moist.
Make-ahead tips
- Store cooked components separately: Keep the rice and salmon in separate airtight containers, then add cucumber, avocado, spring onion and sesame seeds fresh.
- Reheat gently: Warm the rice with a little water until piping hot, and heat the salmon gently so it does not dry out.

Ingredients
Instructions
- Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and reduce to the lowest heat. Cook for 12 minutes, then take off the heat and leave covered for 10 minutes to steam.
- Meanwhile, stir together the soy sauce and mirin in a small bowl. Pat the salmon dry, then brush all over with half the soy and mirin mixture. Set the remaining mixture aside for glazing in the pan.
- Heat the sesame oil in a large frying pan over medium heat. Add the salmon skin-side down and cook for 4 to 5 minutes until the skin is crisp and the flesh is turning opaque up the sides. Turn and cook for 1 to 2 minutes, then pour in the remaining soy and mirin mixture and spoon it over the fish for 30 to 60 seconds until glossy and just cooked through.
- Slice the cucumber and avocado, and thinly slice the spring onion. Fluff the rice, then divide between two bowls. Top with cucumber, avocado and the glazed salmon, then spoon over any pan glaze and finish with spring onion and roasted sesame seeds.
Recipe notes
Tips
- For the best texture, keep the heat moderate so the soy and mirin glaze turns glossy rather than catching in the pan.
- If you prefer, remove the salmon skin after cooking and flake the fish into large pieces before serving.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the salmon is cooked until piping hot throughout.
Substitutions
- Replace Mirin with dry sherry for a similar sweetness and aroma.
- Replace Soy sauce with light soy sauce for a slightly lighter, less intense seasoning.
Storage
- Refrigerate up to 2 days
- Store rice and salmon in separate airtight containers. Reheat the rice with a splash of water in the microwave until piping hot, and warm the salmon gently in a frying pan over low heat; add cucumber, avocado, spring onion and roasted sesame seeds fresh.
