Arroz Rojo (Mexican Red Rice)

Known as Mexican red rice, arroz rojo is the tomato-tinted side dish often served with everyday Mexican meals, from tacos and enchiladas to beans and simple grilled dishes. Its character comes from toasting long-grain rice in oil before simmering it with a blended tomato, onion and garlic base, giving the grains a nutty flavour and helping them stay separate rather than sticky. Cumin adds gentle warmth, while carrot and peas bring the familiar taquería-style colour and sweetness. Fluffy, savoury and easy to adapt, it is a practical side that turns a few pantry ingredients into something much more rounded.

Why this recipe works

  • Built-in savoury depth: Toasting the rice first gives it a nutty base before the tomato, onion, garlic and stock are added.
  • Separate, fluffy grains: Cooking the rice gently and leaving it covered to steam helps the grains finish tender without becoming mashed.
  • Easy to serve widely: Its mild tomato flavour works as a side for tacos, beans, grilled vegetables, eggs or saucy Mexican-style mains.

Timing notes

  • Let it steam off the heat: The covered resting time is important: it allows the remaining moisture to settle evenly through the rice before fluffing.
  • Prepare vegetables while it simmers: Dice the carrot during the covered simmer so it is ready to add near the end without extending the cooking time.

Texture tips

  • Toast the rice properly: Cook the grains until lightly golden and nutty before adding liquid; this helps them stay distinct rather than clumping.
  • Keep the lid on: Avoid lifting the lid during the main simmer, as escaping steam can interrupt the cooking and lead to uneven texture.

Authenticity notes

  • A familiar Mexican side: Arroz rojo is commonly served as a simple everyday accompaniment, often with vegetables such as peas and carrot folded through.
  • Vegetable additions vary: Peas and carrot are classic, but the same tomato rice base is often adapted depending on what is available.

Make-ahead tips

  • Good for batch cooking: Cool the rice quickly, store it in sealed portions and reheat until piping hot throughout.
  • Reheat gently with moisture: Add a small splash of water when reheating in a covered pan or microwave to help the grains soften without drying out.

  1. Finely chop the onion and garlic. Roughly chop the tomatoes. Keep the stock hot in a saucepan or kettle.
  2. Blend the tomatoes with the onion and garlic until smooth. If needed, add a splash of the stock to help it blend. Set aside.
  3. Heat the rapeseed oil in a saucepan over medium heat. Add the rice and cook, stirring often, for 6 to 8 minutes until it smells nutty and turns light golden. Keep it moving so it toasts evenly.
  4. Carefully pour in the blended tomato mixture and stir well. Cook for 2 to 3 minutes, stirring, until it darkens slightly and the raw tomato smell cooks off. Stir in the cumin and salt.
  5. Pour in the hot vegetable stock and bring to a gentle simmer. Reduce to low, cover, and cook for 15 minutes without lifting the lid. The rice should be nearly tender and most of the liquid absorbed.
  6. Peel and dice the carrot into small cubes. Scatter the carrot and peas over the rice, then cover again. Cook for 5 to 7 minutes until the rice is tender and the vegetables are cooked through.
  7. Remove from the heat and leave, covered, for 5 minutes to steam. Fluff gently with a fork, lifting from the bottom so you do not mash the grains. Taste and adjust with a pinch more salt if needed.

Recipe notes

Tips

  • For the fluffiest rice, keep the heat low once it simmers and avoid lifting the lid until the end.
  • Dice the carrot small so it cooks through in the final minutes without overcooking the rice.
  • If serving to vulnerable groups, make sure the rice is piping hot all the way through before serving.

Substitutions

  • Replace rapeseed oil with olive oil for a slightly fruitier flavour.
  • Replace ground cumin with smoked paprika for a warmer, smokier note.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a saucepan with a splash of water, covered, over low heat until piping hot, or microwave covered, stirring halfway. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
