Capirotada (Mexican Bread Pudding with Piloncillo Syrup)
Why this recipe works
- Spiced syrup depth: Cinnamon and clove infuse the sugar syrup, giving the pudding warmth and fragrance without needing a long cook.
- Soft, crisp and crunchy: Toasted bread absorbs the syrup while keeping some structure, with raisins, peanuts and queso fresco adding contrast between the layers.
- Sweet-savoury balance: The salty crumble of queso fresco keeps the syrupy bread from tasting one-dimensional.

Authenticity notes
- Layered, not stirred: Capirotada is built in layers so the syrup can soak through the bread while the fruit, nuts and cheese remain distinct.
- Household variations: The combination of dried fruit, nuts and cheese often varies by cook; the key is keeping the sweet syrup and savoury accent in balance.
Texture tips
- Toast the bread well: Aim for bread that is lightly golden and dry at the edges before layering, so it absorbs syrup without collapsing.
- Let it settle before serving: A short rest after baking helps the centre set while keeping the pudding soft and syrupy.
Ingredient notes
- Use slightly stale bread: Day-old bread is ideal because it drinks in the syrup more evenly than very fresh bread.
- Queso fresco matters: Queso fresco adds a mild salty note and crumbly texture; feta gives a stronger, saltier finish if used instead.
Make-ahead tips
- Prepare components ahead: The syrup can be made in advance and warmed gently before assembling so it soaks into the bread more easily.
- Reheat gently: Reheat refrigerated portions in a 180°C (355°F) oven, adding a little water if the syrup has thickened too much.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Lightly grease a baking dish with a little of the unsalted butter.
- Cut the white bread into thick slices. Melt the remaining butter and brush it over both sides of the bread, then toast on a baking tray for 10 to 12 minutes, turning once, until lightly golden and dry at the edges.
- Meanwhile, put the water, brown sugar, cinnamon sticks and whole cloves in a saucepan. Bring to a gentle simmer, stirring to dissolve the sugar, then cook for 8 to 10 minutes until slightly syrupy and fragrant.
- Remove the syrup from the heat and lift out the cinnamon sticks and cloves. Pour a thin layer of syrup into the baking dish, then add a layer of toasted bread.
- Scatter over some of the raisin, peanuts and queso fresco. Repeat the layers, finishing with the remaining syrup poured evenly over the top so the bread is well soaked.
- Bake for 25 to 30 minutes until the centre is set but still custardy and the edges are bubbling. Rest for 5 minutes, then serve warm with a spoonful of syrup from the dish.

Tips
- For the best texture, use slightly stale bread so it soaks up the syrup without collapsing.
- Keep the syrup at a gentle simmer so the cinnamon and clove infuse without turning bitter.
- Food safety note: if serving to young children, remove the whole cloves carefully before baking to avoid a choking hazard.
Substitutions
- Replace Queso fresco with Feta cheese for a similarly salty, crumbly finish.
- Replace Peanuts with Walnuts for a softer crunch and a more mellow nut flavour.
- Replace Brown sugar with Dark brown sugar for a deeper, more caramel-like syrup.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 12 to 15 minutes, adding a splash of water to loosen the syrup if needed.
