Tacos Dorados de Pollo (Crispy Fried Chicken Tacos)
Why this recipe works
- Crisp shells: Briefly warming the corn tortillas before filling helps them fold cleanly, while shallow-frying creates a crunchy golden exterior.
- Seasoned from the start: Simmering the chicken with onion, garlic, cumin and oregano gives the filling savoury depth before it goes into the tortillas.
- Fresh contrast: Tomato salsa and lime cut through the richness of the fried tacos, while crema and queso fresco add a cool, creamy finish.

Texture tips
- Keep the filling juicy, not wet: Moisten the shredded chicken with a splash of cooking liquid, but avoid adding so much that it seeps into the tortillas before frying.
- Fry in small batches: Give the tacos space in the pan so the oil temperature stays steady and the shells crisp evenly.
- Stop at deep golden: Remove the tacos once the tortillas are crisp and browned; leaving them too long can make the edges hard rather than brittle.
Common mistakes
- Using oil that is too cool or too hot: Cool oil makes the tacos greasy, while overly hot oil browns the outside before the tortilla has crisped properly.
- Filling cold, stiff tortillas: Corn tortillas are more likely to crack if they are not warmed until pliable before folding.
- Adding too many at once: Crowding lowers the oil temperature and makes it harder to turn the tacos without breaking them.
Make-ahead tips
- Cook the chicken in advance: The chicken can be simmered, shredded and chilled ahead of time, then brought back to a workable temperature before filling the tortillas.
- Keep toppings separate: Store fried tacos away from lettuce, crema, cheese and salsa so the shells stay as crisp as possible.
- Re-crisp in the oven: Reheat fried tacos on a baking tray at 200°C (390°F) until hot and crisp, then add the fresh toppings just before serving.
Ingredient notes
- Use corn tortillas: Corn tortillas give tacos dorados their characteristic flavour and crisp texture; warm them well so they fold without splitting.
- Choose ripe tomatoes: Ripe tomatoes make the salsa brighter and juicier, balancing the fried tacos without needing a cooked sauce.
- Crema substitutes: Thinned sour cream works well as a replacement for Mexican crema, but keep it loose enough to drizzle over the crisp tacos.

Instructions
- Put the chicken thighs in a large pot and cover with water. Add half the onion (leave the rest for the salsa), 2 garlic cloves, the cumin, oregano and 1 tsp of the salt. Bring to the boil, then reduce to a gentle simmer for 18 to 22 minutes, until the chicken is cooked through and tender.
- Lift the chicken out and leave until cool enough to handle, then shred it. Add a splash of the cooking liquid to keep it juicy, and season with the remaining 0.5 tsp salt if needed. Discard the onion and garlic from the pot.
- Make the salsa: finely chop the tomatoes and the remaining half onion, then finely grate or crush the remaining garlic clove. Squeeze in the lime juice and stir well, then set aside for the flavours to mingle.
- Warm the corn tortillas briefly in a dry frying pan so they are pliable. Spoon a line of shredded chicken down the centre of each tortilla, fold over, and press gently to seal. Keep the filled tacos covered with a clean tea towel as you work so they do not dry out.
- Pour the vegetable oil into a frying pan to a depth of about 2 cm and heat over medium-high until a small piece of tortilla sizzles immediately. Fry the tacos in batches for 2 to 3 minutes per side, turning with tongs, until deep golden and crisp. Transfer to a plate and keep warm while you fry the rest.
- Serve the tacos hot, topped with shredded iceberg lettuce, a drizzle of Mexican crema, crumbled queso fresco and spoonfuls of tomato salsa. Finish with extra lime juice at the table if you like.
Recipe notes
Tips
- If your tortillas crack when folding, warm them a little longer so they soften before filling.
- Keep the oil at a steady medium-high heat: if it is too cool the tacos will absorb oil, and if it is too hot they will brown before crisping properly.
- Food safety: make sure the chicken is cooked through with no pink remaining, and serve the tacos piping hot.
Substitutions
- Replace Mexican crema with sour cream thinned with a little water for a similar drizzleable topping.
- Replace queso fresco with feta cheese for a similarly crumbly, salty finish.
Storage
- Refrigerate up to 2 days
- Store fried tacos and toppings separately in the fridge. Reheat the tacos on a baking tray at 200°C (390°F) for 8 to 10 minutes until hot and crisp, then add the lettuce, crema, queso fresco and salsa just before serving.
