Modern Enchilada Casserole (Chicken, Black Beans and Cheddar)
Why this recipe works
- Smoky sauce base: Onion, garlic, cumin and smoked paprika give the tomato sauce depth before the chicken and beans are folded through.
- Soft, saucy layers: Corn tortillas absorb the sauce as they bake, creating a tender layered texture beneath the melted Cheddar topping.
- Good for planning ahead: The casserole reheats well and can be frozen in portions, making it useful for batch cooking or next-day lunches.

Ingredient notes
- Use corn tortillas: Corn tortillas give the casserole its enchilada-style flavour and soften well into the sauce. Tear them to fit the dish neatly.
- Smoky, not hot: Smoked paprika adds depth without chilli heat. Use regular paprika if you prefer a gentler, less smoky sauce.
- Cheese choice: Cheddar gives a sharper, more golden topping, while Monterey Jack melts into a milder, creamier finish.
Common mistakes
- Leaving the sauce too thin: Simmer the tomato sauce until it is slightly thickened and spoonable, otherwise the tortilla layers can become too loose.
- Using very soft tortillas straight from the pack: If the tortillas are especially fresh and pliable, briefly toast them in a dry frying pan so they hold their shape better.
- Serving immediately: Let the casserole stand briefly after baking so the layers settle and portions lift out more cleanly.
Make-ahead tips
- Prepare the filling ahead: Cook the tomato sauce with the chicken and beans, cool it completely, then refrigerate and assemble the casserole before baking.
- Freeze cooked portions: Cool completely, portion into airtight containers and freeze for up to 2 months. Defrost overnight in the fridge before reheating.
- Reheat until piping hot: Reheat portions in a 180°C (355°F) oven or microwave until steaming hot throughout.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Peel and finely chop the onion, then peel and finely grate the garlic.
- Heat the olive oil in a saucepan over medium heat and cook the onion for 6 to 8 minutes until softened. Stir in the garlic, cumin and smoked paprika and cook for 30 seconds until fragrant.
- Add the chopped tomatoes, water, salt and black pepper, then bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until slightly thickened and spoonable.
- Meanwhile, heat a frying pan over medium-high heat and cook the chicken thighs for 5 to 7 minutes, turning, until cooked through and lightly browned. Tip onto a board and shred with two forks.
- Rinse and drain the black beans. Stir the beans and shredded chicken into the tomato sauce and simmer for 2 minutes to bring everything together.
- Spoon a thin layer of sauce into a baking dish, then add a layer of corn tortillas, tearing to fit. Repeat with the remaining tortillas and sauce, finishing with sauce on top.
- Grate the Cheddar and scatter it over the casserole. Bake for 20 minutes until bubbling at the edges and the cheese is melted and lightly golden.
- Rest for 5 minutes so the layers set slightly. Serve hot with a spoon of sour cream on each portion.
Recipe notes
Tips
- If your tortillas are very fresh and soft, toast them briefly in a dry frying pan to help them hold their shape in the layers.
- For the best texture, keep the sauce at a gentle simmer so it thickens without catching on the base of the pan.
- If serving pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised sour cream.
Substitutions
- Replace Cheddar cheese with Monterey Jack cheese for a milder, creamier topping.
- Replace chicken thighs with chicken breast for a leaner casserole; take care not to overcook it when pan-frying.
- Replace smoked paprika with ground paprika for a less smoky sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat portions in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave until steaming hot throughout. Freeze in airtight portions for up to 2 months and defrost overnight in the fridge before reheating.
