Sichuan Glazed Salmon
Why this recipe works
- Sharp-savoury balance: Chinese black vinegar cuts through the richness of the salmon while soy sauce gives the glaze depth and saltiness.
- Crisp skin, sticky glaze: Searing the salmon skin-side down first creates contrast before the glossy sauce coats the fish.
- Aromatic heat: Garlic, ginger, chilli flakes and crushed peppercorns add warmth and fragrance without needing a long simmer.
- Fast weeknight cooking: The glaze is mixed before cooking, so the salmon can be seared, sauced and served in under 30 minutes.

Adjust the heat
- For less heat: Reduce the chilli flakes and keep the peppercorns lightly crushed rather than finely ground.
- For more heat: Add extra chilli flakes to the glaze, tasting as it reduces so the heat stays balanced.
- Keep the glaze balanced: If the chilli tastes too sharp, round it out with a little more sweetness or vinegar to suit your taste.
Ingredient notes
- Use skin-on salmon: Skin-on fillets give the best texture because the skin crisps in the pan and helps protect the flesh from drying out.
- Chinese black vinegar: Black vinegar brings a mellow tang and savoury depth; rice vinegar can be used for a lighter, sharper result.
- Crush the peppercorns: Lightly crushing the peppercorns releases their fragrance while keeping the glaze pleasantly textured.
Texture tips
- Crisper skin: Pat the salmon dry and leave it undisturbed in the pan until the skin releases easily.
- Avoid dry salmon: Return the fish to the glaze only briefly, just long enough to coat it and finish cooking.
- Protect the glaze: Lower the heat before adding the soy-vinegar mixture so the sugar thickens without scorching.
Serving ideas
- Serve with rice: Steamed rice is ideal for catching the sticky glaze and softening the salty-tangy intensity.
- Add crisp greens: Pak choi, green beans or broccoli work well alongside the rich salmon and glossy sauce.
- Finish fresh: Scatter the green spring onion tops over the fish just before serving for freshness and colour.

Ingredients
Instructions
- Thinly slice the spring onions, keeping the white and green parts separate. Finely grate the garlic and ginger. Lightly crush the black peppercorns with a mortar and pestle or the side of a knife.
- In a small bowl, stir together the light soy sauce, Chinese black vinegar, caster sugar, chilli flakes and crushed peppercorns until the sugar is mostly dissolved. Set the glaze beside the hob so it is ready to go.
- Heat the sunflower oil in a large frying pan over medium-high heat. Add the salmon skin-side down and cook for 4 to 5 minutes until the skin is crisp and the flesh is turning opaque up the sides. Turn and cook for 1 to 2 minutes, then transfer to a plate.
- Lower the heat to medium and add the white parts of the spring onion, then cook for 30 seconds until fragrant. Add the garlic and ginger and cook for 30 to 60 seconds, stirring so they do not catch. Pour in the glaze and simmer for 2 to 3 minutes until glossy and slightly thickened.
- Return the salmon to the pan and spoon the glaze over the top. Cook for 1 to 2 minutes, turning once, until the salmon is just cooked through and coated in a sticky glaze. Scatter over the green parts of the spring onion to serve.

Serving suggestions
This recipe pairs well with:
Tips
- For the best sear, pat the salmon dry before it goes into the hot oil and avoid moving it until the skin releases easily.
- Keep the heat moderate once the glaze is in the pan so it reduces to a shine without burning.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the salmon until piping hot throughout.
Substitutions
- Replace Chinese black vinegar with rice vinegar for a lighter, sharper tang.
- Replace caster sugar with honey for a rounder sweetness and a slightly softer glaze.
- Replace chili flakes with a smaller amount of hot sauce for a smoother heat.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, or eat cold flaked through rice.
