Chinese Five-Spice Pork Bowl with Jasmine Rice

A Chinese-style pork rice bowl is a compact, satisfying meal: seasoned mince spooned over fragrant steamed rice with a quick-cooked green vegetable alongside. Here, Chinese five-spice gives the pork its distinctive warmth and aromatic depth, while light and dark soy sauces form a glossy savoury glaze that clings to the meat rather than pooling in the bowl. Jasmine rice keeps the base soft and fragrant, and pak choi brings freshness, colour and a little crunch. Finished with spring onion and chilli, it is well suited to a fast lunch or weeknight dinner, with enough flexibility to swap in other quick-cooking greens or a different mince if needed.

Why this recipe works

  • Aromatic depth: Garlic, ginger and Chinese five-spice give the pork warmth and fragrance without needing a long simmer.
  • Fast weeknight cooking: Minced pork browns quickly, and the soy glaze thickens in just a couple of minutes once it hits the pan.
  • Balanced bowl format: Soft jasmine rice, savoury glazed pork and bright pak choi create a complete meal with contrasting textures.

Adjust the heat

  • For less heat: Remove the chilli seeds before slicing, or leave the chilli out and finish with extra spring onion instead.
  • For more heat: Add extra fresh chilli with the garlic and ginger, or serve chilli oil at the table for a stronger finish.

Texture tips

  • Keep the rice fluffy: Let the cooked rice rest, covered, off the heat so it finishes steaming and separates cleanly when fluffed.
  • Keep the pak choi bright: Stir-fry the pak choi only until just tender so the stems retain a little bite.

Ingredient swaps

  • Swap the pork: Minced turkey works well if you want a lighter bowl, though it may need careful heat control to avoid drying out.
  • Change the greens: Broccoli florets can replace pak choi; cut them small enough to cook quickly in the pan.

Make-ahead tips

  • Good for meal prep: Cool portions quickly and refrigerate in sealed containers for easy lunches or dinners over the next few days.
  • Reheat gently: Warm in a frying pan with a splash of water, or microwave covered and stir halfway through until piping hot.

  1. Rinse the rice in a colander until the water runs mostly clear. Tip into a saucepan with 320 ml water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, peel and finely grate the garlic and ginger. Thinly slice the chilli, and slice the spring onions, keeping the green tops for serving. Trim the bok choy and separate the leaves.
  3. In a small bowl, stir together the light soy sauce, dark soy sauce, water and cornflour until smooth. Set it beside the hob so it is ready to go into the pan quickly. This will become the glossy glaze.
  4. Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the minced pork and cook for 5 to 6 minutes, breaking it up, until browned and cooked through. Stir in the garlic, ginger, chilli and Chinese five spice powder and cook for 30 to 60 seconds until fragrant.
  5. Give the soy mixture a final stir, then pour it into the pan and toss to coat. Cook for 1 to 2 minutes until the sauce turns glossy and clings to the pork. Reduce the heat if it starts to catch.
  6. Add the bok choy to the pan and stir-fry for 2 to 3 minutes until just tender and bright green, with a little bite left. Taste and adjust by cooking a splash more water through if you want it looser. Take off the heat.
  7. Fluff the rice with a fork and divide between two bowls. Spoon over the five-spice pork and bok choy, then scatter over the reserved spring onion greens. Serve straight away while hot.

Recipe notes

Tips

  • For the best texture, let the rice rest off the heat with the lid on so it finishes steaming and stays fluffy.
  • Keep the heat fairly high when browning the pork so it colours rather than stews; if the pan looks dry, add a small splash of water and scrape up the browned bits.
  • If serving to anyone vulnerable, make sure the pork is cooked until piping hot all the way through with no pink remaining.

Substitutions

  • Replace bok choy with broccoli florets for a similar quick-cooking green.
  • Replace minced pork with minced turkey for a lighter bowl.
  • Replace jasmine rice with basmati rice if that is what you have.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan with a splash of water over medium heat until piping hot, or microwave covered, stirring halfway. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
