Korean Spicy Noodle Salad
Why this recipe works
- Fast, fresh assembly: The noodles cook quickly, then the dressing and vegetables come together while they cool.
- Bright, balanced dressing: Rice vinegar sharpens the gochujang while sesame oil and soy sauce add depth and savoury roundness.
- Springy and crisp: Cold-rinsed noodles stay light and bouncy, with cucumber, carrot and sesame seeds adding crunch.

Adjust the heat
- Make it milder: Start with less gochujang, then add more only after tasting the finished dressing.
- Increase the heat: Use a little extra gochujang or finish with Korean chilli flakes if you want a sharper kick.
- Keep the heat balanced: A touch of honey or extra rice vinegar can soften the chilli intensity without dulling the flavour.
Texture tips
- Keep the noodles springy: Cook the noodles only until just tender, then rinse thoroughly under cold water to stop carry-over cooking.
- Drain well before dressing: Let excess water run off fully so the dressing clings rather than becoming diluted.
- Preserve the vegetable crunch: Slice the cucumber and carrot just before tossing, especially if serving the salad later.
Ingredient notes
- Gochujang: This Korean fermented chilli paste brings heat, sweetness and savoury depth, so it shapes most of the dressing’s flavour.
- Noodle choice: Thin wheat noodles work best because they cool quickly and take on the dressing evenly.
- Adjust the tang: Add a little more rice vinegar at the end if the salad tastes too rich or sweet.
Make-ahead tips
- For the freshest texture: Prepare the dressing and vegetables ahead, but toss everything together closer to serving.
- Serve cold, not reheated: This salad is best slightly chilled or at cool room temperature; toss well after refrigeration before serving.
- For leftovers: Store in an airtight container in the fridge and loosen with a small splash of rice vinegar and sesame oil if needed.

Instructions
- Bring a large pot of water to the boil. Cook the noodles according to the packet instructions until just tender. Drain in a colander and rinse under cold running water until completely cool, then drain well.
- In a large bowl, whisk together the gochujang, rice vinegar, toasted sesame oil, soy sauce and honey (if using) until smooth. Taste and adjust with a little more rice vinegar for extra sharpness, if you like. Set aside while you prep the vegetables.
- Cut the cucumber into thin matchsticks. Peel the carrot, then cut into fine matchsticks. Thinly slice the spring onions.
- Add the drained noodles to the dressing and toss until evenly coated. Add the cucumber, carrot and most of the spring onions, then toss again. Sprinkle over the roasted sesame seeds and the remaining spring onions to finish.
- Let the salad stand for 2 minutes so the noodles take on the dressing. Toss once more just before serving. Serve slightly chilled or at cool room temperature.
Recipe notes
Tips
- Rinse the noodles thoroughly after cooking to stop them overcooking and to keep the salad light and springy.
- For the best crunch, keep the cucumber and carrot in the fridge until you are ready to slice them.
- If serving to young children or anyone sensitive to heat, start with 1 tbsp gochujang and add more to taste.
Substitutions
- Replace honey with maple syrup for a vegan-friendly sweetness.
- Replace rice vinegar with white-wine vinegar for a slightly fruitier tang.
- Replace soy sauce with light-soy-sauce for a lighter, saltier finish.
Storage
- Refrigerate up to 2 days
- Store in an airtight container in the fridge. Toss well before serving; if it looks a little dry, loosen with a small splash of rice vinegar and a few drops of toasted sesame oil.
