Vietnamese Prawn Rice Bowl with Lime and Fish Sauce Dressing
Why this recipe works
- Fast cooking: Prawns cook in minutes, making the bowl practical for a quick weekday meal.
- Balanced dressing: Lime juice cuts through the salty fish sauce while brown sugar softens the sharpness.
- Fresh contrast: Warm rice and glossy prawns are balanced by crisp cucumber, grated carrot, herbs and crunchy peanuts.

Ingredient notes
- Dry the prawns well: Patting the prawns dry helps them cook cleanly in the hot pan and take on the glossy fish sauce glaze rather than steaming.
- Balance the dressing: Taste before serving and adjust with extra lime for brightness or a little more fish sauce if it needs deeper savouriness.
- Nước chấm-style balance: The fish sauce, lime and sugar combination gives the dressing a Vietnamese-style sweet-salty-sour profile, though the bowl itself is streamlined for everyday cooking.
Adjust the heat
- For less heat: Reduce the Kashmiri chilli or use smoked paprika for a gentler, slightly smoky flavour.
- For more heat: Add a little extra Kashmiri chilli, or finish with sliced fresh chilli if you want a sharper kick.
- Keep it balanced: If increasing the chilli, taste the dressing again so the lime and fish sauce still come through clearly.
Common mistakes
- Overcooking the prawns: Take them off the heat as soon as they are pink and opaque; extra time in the pan can make them tough.
- Burning the garlic: Garlic only needs a short sizzle before the prawns go in, so keep it moving and avoid letting it brown too deeply.
- Dressing too early: Drizzle the dressing just before serving so the cucumber, carrot and peanuts keep their fresh crunch.
Make-ahead tips
- Store separately: Keep the rice, prawns, vegetables, herbs, dressing and peanuts in separate containers to preserve texture.
- Reheat gently: Warm the rice and prawns in a frying pan with a splash of water until piping hot, then add the cold vegetables, herbs, dressing and peanuts.
- Best assembled fresh: The cooked components keep well, but the bowl tastes brightest when the herbs, dressing and peanuts are added just before eating.

Ingredients
Instructions
- Rinse the jasmine rice until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, finely grate the garlic. In a small bowl, whisk together 2 tbsp fish sauce, 1 tsp light brown sugar, and the juice of half the lime until the sugar dissolves; set aside as the dressing.
- Slice the cucumber into thin half-moons and grate the carrot. Roughly chop the fresh mint and fresh coriander. Roughly chop the roasted peanuts.
- Pat the prawns dry. Heat the sunflower oil in a large frying pan over medium-high heat, add the garlic and cook for 20 seconds until fragrant. Add the prawns and cook for 2 to 3 minutes, tossing, until pink and just cooked through.
- Stir in the remaining 1 tbsp fish sauce, the remaining 1 tsp light brown sugar, the ground Kashmiri chili, and the juice of the remaining lime half. Toss for 30 to 60 seconds until glossy and lightly caramelised, then take off the heat.
- Divide the rice between two bowls. Top with cucumber, carrot, herbs, and the prawns, then drizzle over the dressing. Finish with the peanuts and serve straight away.
Recipe notes
Tips
- For the juiciest prawns, keep the pan hot and stop cooking as soon as they turn pink and opaque.
- Taste the dressing before serving and adjust with a little more lime juice for brightness or fish sauce for saltiness.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are cooked until fully opaque throughout.
Substitutions
- Replace ground Kashmiri chili with smoked paprika for a milder, smokier heat.
- Replace roasted peanuts with roasted cashew nuts for a similar crunch and richness.
Storage
- Refrigerate up to 2 days
- Store rice, prawns, and vegetables separately in airtight containers. Reheat the rice and prawns in a frying pan with a splash of water until piping hot, then add the cucumber, carrot, herbs, dressing, and peanuts just before serving.
