Feijoada (Brazilian Black Bean Stew with Pork and Beef)
Why this recipe works
- Deep savoury base: Browning the pork and beef before simmering gives the stew a richer, more rounded flavour.
- Slow-simmered texture: Dried black beans and tougher cuts of meat become tender together during the long, gentle cook.
- Richness in balance: Orange juice added near the end brightens the stew and cuts through the richness of the meat.

Timing notes
- Plan for soaking: The dried black beans need an 8 to 12 hour soak before cooking, so start them the night before.
- Mostly hands-off: Active preparation is relatively short; the main time commitment is the slow simmer that softens the beans and meat.
Authenticity notes
- Brazilian black bean stew: Feijoada is closely associated with Brazilian cooking and is built around black beans simmered with rich cuts of meat.
- Smoky shortcut: Smoked paprika gives this home version a smoky depth without relying on a wider mix of cured meats.
- Serve with rice and farofa: Plain rice balances the rich broth, while farofa adds the dry, toasty contrast traditionally served alongside.
Texture tips
- For a thicker stew: Mash some of the cooked beans against the side of the pot, then stir them back through to naturally thicken the broth.
- Keep the simmer gentle: Low, steady heat helps the meat turn soft while keeping the beans from breaking down too aggressively.
Make-ahead tips
- Good made ahead: Feijoada holds well in the fridge and the flavour deepens as it rests, making it well suited to cooking in advance.
- Reheat gently: Warm on the hob with a splash of water, stirring occasionally, until piping hot throughout.
- Freezer-friendly: Cool completely before freezing in sealed containers, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Pick over the dried black beans and rinse well. Put them in a bowl, cover with plenty of cold water, and soak for 8 to 12 hours. Drain and rinse again.
- Cut the pork shoulder and beef brisket into bite-sized chunks. Finely chop the yellow onion and slice the garlic. Pat the meat dry and season it with 1 tsp fine sea salt and the black pepper.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the pork and beef in batches until well coloured, 6 to 8 minutes per batch, then return all the meat to the pot. Reduce the heat to medium.
- Add the onion with a pinch of the remaining fine sea salt and cook, stirring, until softened, about 6 minutes. Stir in the garlic and smoked paprika and cook for 1 minute until fragrant. Add the bay leaves.
- Add the drained beans and pour in the water. Bring to a gentle simmer, then partially cover and cook on low, stirring occasionally, for 1 hour 30 minutes to 2 hours, until the beans are tender and the meat is very soft. Skim any excess fat from the surface if you like.
- Stir in the orange juice and simmer uncovered for 10 to 15 minutes, until the stew is glossy and thickened. Taste and season with the remaining fine sea salt if needed. Remove the bay leaves before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle; a hard boil can split the beans and make the meat dry.
- For a thicker stew, mash a ladleful of beans against the side of the pot, then stir back in and simmer for a few minutes.
- If serving vulnerable groups, make sure the pork and beef are cooked until very tender and piping hot throughout.
Substitutions
- Replace olive oil with vegetable oil for a more neutral base.
- Replace orange juice with freshly squeezed orange juice for a brighter finish.
- Replace pork shoulder with pork belly for a richer, more traditional-style result.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently on the hob with a splash of water until piping hot; the stew will thicken as it stands. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
