Latin-Inspired Quinoa Grain Bowl with Black Beans and Avocado

A Latin-inspired quinoa grain bowl brings together the structure of a composed lunch bowl with the bright, punchy flavours often found in fresh salsas, beans and lime-dressed salads. Fluffy quinoa forms a light base for sweet roasted potato, warm black beans, creamy avocado and a quick tomato, red onion and jalapeño salsa. The result is filling without feeling heavy, with sweetness, acidity, gentle heat and fresh coriander in each bite. It is well suited to meal prep if the salsa and avocado are kept separate, and can be made milder or heartier with simple swaps.

Why this recipe works

  • Contrasting textures: Roasted sweet potato, fluffy quinoa, warm beans, fresh salsa and creamy avocado keep each bite varied.
  • Bright, balanced finish: Lime juice and tomato salsa cut through the richness of the avocado and olive oil dressing.
  • Easy to prepare in parts: The cooked quinoa, beans and sweet potato can be stored separately from the fresh toppings for quick assembly.

Adjust the heat

  • For less heat: Remove the jalapeno seeds and white pith, or swap it for red pepper for a no-heat version.
  • For more heat: Keep some of the jalapeno seeds in the salsa, then taste and adjust before serving.

Make-ahead tips

  • Keep fresh toppings separate: Store the quinoa, sweet potato and beans together, but keep the salsa and avocado separate until serving.
  • Reheat the cooked base: Warm the quinoa, sweet potato and beans until piping hot, then add the salsa, avocado and dressing just before eating.

Ingredient notes

  • Rinse the quinoa well: Rinsing helps remove quinoa’s natural bitterness and gives the finished grains a cleaner flavour.
  • Choose a firm-ripe avocado: A ripe but firm avocado slices neatly and holds its shape in the bowl.
  • Use fresh herbs: Fresh coriander gives the dressing its bright finish; flat-leaf parsley works if coriander is not preferred.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm cubes, then toss on a baking tray with 1 tbsp of the olive oil, half the salt, and the pepper.
  2. Roast for 20 to 25 minutes, turning once, until tender and browned at the edges. Set aside while you finish the bowl components.
  3. Rinse the quinoa well, then put it in a saucepan with the water and the remaining salt. Bring to the boil, cover, and simmer on low for 12 to 14 minutes until the water is absorbed and the quinoa is fluffy.
  4. Take the pan off the heat and leave, covered, for 5 minutes, then fluff with a fork. Tip into a bowl to cool slightly.
  5. Drain and rinse the black beans, then put them in a small saucepan with a splash of water. Warm over low heat for 3 to 4 minutes, just until hot, then cover to keep warm.
  6. Dice the tomato, finely chop the red onion, and finely chop the jalapeno pepper (remove the seeds for less heat). Mix them in a bowl with half the lime juice and a pinch of salt.
  7. Finely chop most of the fresh coriander, reserving a little to finish. Whisk the remaining olive oil with the remaining lime juice and the chopped coriander to make a zesty dressing, then season with a pinch of salt.
  8. Halve the avocado, remove the stone, and slice the flesh. Divide the quinoa between two bowls, then top with the roasted sweet potato, warm black beans, tomato salsa, and avocado; drizzle over the dressing and finish with the reserved coriander.

  • Replace jalapeno pepper with red pepper for a no-heat version.
  • Replace fresh coriander with fresh flat-leaf parsley for a different herb profile.

Storage
